I'm currently painting throughout, the main color is Benjamin Moore Pale Oak. I still have a long way to go (and a few more colors to choose), but some upstairs bedrooms I painted Sherwin Williams Agreeable Gray and Incredible White.

We did Sherwin Williams Modern Gray. We had swatches on our wall forever. This was not even close to our first choice until we saw it on the wall. It is a nice warm gray without a hint of blue, purple, or green, and it's not brown.

Whatever you try, definitely swatch it in your space. Changing light bulbs might help the glow of your fixtures - some bulbs read very yellow compared to others.
For taupe tones by Benjamin moore - we have sailcloth in our basement (extremely pale taupe) and Manchester Tan in our kitchen, which is a little darker.
With what you've described I would probably lean towards a warmer gray or a sage. I think they would look nice w/the granite and black tones.
I lucked out when I painted my front hall, the first room I painted in my house, and found a color that I adore - Benjamin Moore Georgia on my Mind (https://www.benjaminmoore.com/en-ca/colour-overview/find-your-colour/colour/134/georgia-on-my-mind?color=134).
I've used it and a shade darker (Peach Cider) elsewhere. It's a nice warm color, which I really appreciate (I'm in the northeast - sunshine is a myth).

We did Pale Oak in our new addition and really like it. Trim is Chantilly Lace. The bed is cream-colored if you want to compare, the closest color-match I could find to it was Navajo White. For the light fixtures, are you sure it is the fixture that is giving off the yellow cast and not the bulb?
Has anyone done something like this? I think I I really like the walls lighter than the trim...
I have not. I feel like a house needs interesting/cool/unique/impressive architecture and design to pull that off nicely. My '90s builder basic suburb house would not look good like that.
As someone who cursed the previous owners of my house as I painted over dark blue and dark green molding that still looked moldy on the edges afterward...I would not paint my molding dark.
