I use green onions on just about anything mexican as well as the aforementioned thai noodle dishes. I like them in scrambled eggs, if you want to get really basic. They are great on top of lots of soups/chili.
I use them in any recipe that I would use an onion for, especially if it would only need a small amount of onion: tacos, stir fry, sauces, omelettes/frittatas, any veggie side.
A lot of the Blue Apron meals we do have you throw the white bottoms in the skillet with whatever Mexican dish you're making, and garnish the dish with the green tops.
