I’ve never had a kitchen with pendant lights. Both houses have low(ish) ceilings, so pendant lights don’t make sense.. we just have can lights and I’m cool with it.
We have an old school track light in our vaulted/open floor plan kitchen. I have been wanting to replace it, and will likely do it with more track lighting. It provides a lot of light in the space and into some of the other rooms as needed. The newer track lighting does allow for mix match, so pendants could be added or swapped out.
My parents, in their non-vaulted ranch just have 2 flush mount ceiling lights in the kitchen area and a drop/basic chandelier type above the table. I think we’d be bonking our heads in pendants there.
I've never had pendant lighting in a kitchen. My parents' house (where I grew up and they just remodeled), house with exH, and my townhome all had/have can lights in the kitchen; and my parents' and my townhome have islands too.

We have can lights above the sink and a pendant above our dining table. I'd like to add another light above the sink as the can light isn't good enough for me.
We don't. It doesn't work with our kitchen layout. I had some pretty pricey pendant lights from Currey & Co. in our old house that we removed and replaced with inexpensive pendants before listing... they are boxed up in my attic. Oh well. We just have a bunch of recessed can lights in our kitchen now, including the one above the sink. It's plenty of light, especially with our under cabinet lighting.
I have an Individually switched LED pot light over my kitchen sink. We do have rather statement pendants over the island and I didn’t want to compete with them. It is not necessary now since there is so much light from the window, but in the winter it was very nice to have. In addition to the pendants we have five additional LED pot lights in the kitchen and under cabinet lighting too.

Lurker here but chiming in since I know it’s probably not common to forego pendants. This is our not quite finished kitchen (ignore temporary stools and blank wall), have central large hanging light and otherwise just small recessed lights. No pendants.
