Not the OP- but I really love this recipe. So delicious and easy. I put the chicken in raw and let it cook all day.
S: Doro wat and atakilt wat. Originally intended to use up some leftover injera. Then ran out and had to get more. Now we need to make more stew. It's a vicious cycle. M: chipotle and apricot chicken, rice, roasted veg T: grilled sausage and salad - use up whatever is in the fridge - mint, basil. Apple cider vinaigrette. W: sweet potatoes with tahini butter, roasted chickpeas and salad R: something with pork and apples

I put it in the crock pot during my 10am meeting. I hope it's good! It sure was easy to make!
Full disclosure, we will use regular tortilla chips even though homemade ones would probably be far superior, but I don't have any and I don't want to go to the store.
