Please please excuse this incredibly stupid question. And if you can’t answer without mocking me, please just don’t answer lol!
We qualify for the full stimulus of $5,600 for our family of 4. We have not gotten it yet and the IRS says if you don’t get it, just claim it on your taxes.
So, how does that work? We don’t itemize and usually aim for no refund so would this mean we would get a $5,600 refund on our taxes next year?

If you use a tax software like TurboTax, there will be a prompt/question asking if you received it. If you did not, then you’d get that amount as a refund.
Have you checked the irs.gov site to see what your status is? Our first 2 payments were direct deposited and the site told me the third one would be too, but then it changed to being mailed and I just got it yesterday.
Yes, there is a spot saying something like “you should have received $x” did you?
For the 2020 stimulus, I got a partial amount for both stimuli (?) payments. I was able to put both amounts received when I did my 2020 taxes. I will get the rest of what I am due when my refund comes in.
