I’m coming off of a hammy injury and have discovered that at this time, my hamstring really doesn’t like it when I run 3 days in a row. I can do 2 run days + bike, or run, bike, run, but 3 days of running isn’t for me right now.
My schedule this week is: M - 5 miles easy + strength T - 5 x 1,000 @5k pace, total of 10 miles W - 12 miles (rest on Th)
I was contemplating doing: M - 5 x 1,000 @5k, total of 10 T - 45-60 minute Peloton ride + strength W - 12 miles
Is this the most logical edit? It seems odd to do a speed workout on a Monday but I don’t want to lose it, and I worry that a back-to-back 10/12 mile schedule would do more harm than good.

Wow, that’s a tough speed workout followed by another fairly long run! What plan are you using? I think your modification makes sense, although it depends on what you did on Sunday. If you did a long run on Sunday, I wouldn’t do a speed workout the next day. The other option is to move Wednesday’s run to Thursday, but I don’t know what you have planned for Friday.
