I decided to start a new thread, but we've finally started moving forward with the cabinetry for the new pantry area.
Here is my original post which started as the pantry reno and ended up turning in to my entire first floor LOL It has all of the before pictures as well as the original design.

Here is the cabinet color (we'll be doing brass hardware):
Here is my question. What would you do for the countertop and backsplash? Our kitchen will eventually be getting remodeled, but not for a couple of years, and I'm not interested in matching what is in there. I'm thinking/hoping I can find a countertop remnant and would love some input on that and a possible backsplash.
Beautiful - such a difference! I think my friend has the same door handles (are they black or ORB?) - I really like them for a transitional space.
Since the cabinets are going to be so saturated in color, I would go w/a counter in the white color family. I have a quartz remnant in our mudroom - go browse remnants to see if something catches your fancy. Just be careful of undertones, some quartz will lean cooler and others have more warmth.
For such a small area, I'd honestly wait on the backsplash until you redo your kitchen. But if you *really* don't want to wait, I'd go w/something super neutral like a white subway (but pick the counter first of course).
ETA: This may be sacrilege, but if the wood on the cabinets is stain-grade, I'd consider a light weathered gray stain & poly rather than the green paint. I like the wood w/the rest of your design elements. You can always paint them when you do your kitchen. Also, painted cabinets just don't hold up as well as stained - I'm very happy I went w/wood in our mudroom.
The walls in the pantry are SW Opaline, the walls in the kitchen which looks directly in to the pantry area are SW Tidewater, and the trim and doors are painted SW Pure White.

They are actually black which were way harder to find than you would think.
I was definitely leaning towards white for the countertop, but am wondering if I should look for something with movement or if that would be too much with the already bold cabinet color.
@sameoldstory, I think quartz is sold under various names (I can't remember mine), but mine has a slight creaminess and *very faint* warm gray veining. I mean just enough to give it interest but you can't really see it from far away.
Oh, so pretty! I agree that a white (even with some veining) would be great and really go well with the paint color you chose. No idea on backsplash
I am off to read the other post of yours. I wish we could move our laundry upstairs and I could have a true pantry like this. Right now that room for us a laundry (with sink) and mudroom combo.
What about doing something like a butcher block countertop? So you wouldn't feel any need to match future kitchen choices.
I was literally coming in here to get thoughts on doing that and just skipping the backsplash, that way, when we finally do the kitchen, we can match everything. And maybe I'll do like a peel and stick wallpaper for the "backsplash" or something similar.
