Any cool things you've seen for the space over a fridge? I've done some searching and I've seen wine racks, open space for books, microwaves - none of which really appeals to me. If it makes a difference, it will be for above a counter-depth unit.

We're going to have sections for baking pans. Something like this:
My parents did that when they redid their kitchen. My late mom was only 4'11" so in order for the space to be useful, she needed something she could grab just from the very bottom.
At 5'2" I'm not much taller, and I haven't seen any ideas I like better.
At 5'2" the cupboard space above my fridge is useless to me. Even with a small step stool I can't reach it. H sometimes puts stuff only he uses up there. *shrug* The world was made for tall people.

I am only five feet tall, so even with a kitchen stool I still need my husband to access that space. We have a double-door cabinet that holds big rarely-used stuff like cheese trays, casserole dishes, etc. Right now they are kind of nested flat in two stacks, but I think vertical dividers would be a nice idea to easily pull out one. I wouldn't put something there that I couldn't access on a regular basis, and I don't like the idea of having anything open there (bookshelves, wine rack) because it would be hard to dust.
I had our cabinet guys put pullouts in a couple of upper cabinets next to our fridge, but wish that I had done them over the fridge too. I might just buy some at the store and install them myself.
The cabinet guys thought that I was nuts, since I wouldn't be able to reach them without a step stool, but it really makes it much easier to access everything in the cabinet, instead of just what is in front.
Y'all need taller step stools! I'm 5'1" and wouldn't be able to access half my kitchen without my trusty 2-step stool (kinda like this one).
To answer the original question, ours is a sizeable cabinet over the fridge and I just store stuff we don't regularly use up there, like our multi-cup coffee maker, large drink dispenser, etc.

FWIW, I'm 6 inches taller than you and don't really use those cabinets either. They are hard to reach. I do have a couple of things shoved in the one on the right, but the left one is against a wall so I have no idea how anyone could get to it.
As taller people, we do not own a step stool so I guess I'd need a ladder if I wanted to use them?
I wonder why every house has these cabinets. It seems like mostly wasted space.
As far as on top of the fridge, I have a huge wicker basket on mine. We store things like bags of chips and cereal in it since we don't have a pantry, and the basket hides that. We just grab the basket down from up there when we need something in it. It doesn't look amazing, but I think it could be worse and at least renders that space functional.

We have shelves like this. I don't actually put my 'use every day' baking pans in there because I am short and I really do use 2 of them pretty much daily, so those are in the pull out drawer under the oven, but I have muffin and cake pans, pie pans, and other things that get used occasionally up there and it works well.

Here is my cabinet of shame.
We keep liquor and wine up there, silverware in the box since that gets pulled out twice a year, extra platters, kitchen aid mixer accessories and a cake stand. Ours is a regular depth fridge with high ceilings so that cabinet is deep.
