We are building a house and picking out design features like flooring next week. Main floor will be wood look tile or vinyl. I have no idea what to pick! Cabinets will be smoke grey. Walls will be white.

I'd just pick what you like. We had our floors refinished about 5 years ago. We went with a medium stain (it was a combination of Minwax provincial and something else - no orange tone), no gloss finish because it's what we like. Our walls are a warm gray with white, white trim. I'm still happy with the results.
Dark shows every speck of dust, shiny shows scuffs.
We redid the flooring in our house in June before we moved in, and did hardwoods finished in place. American cherry, no stain, satin finish. Hardwoods in general are pretty traditional. Our specific choices maybe less so. I like it, but I'm pretty sure it isn't "hot" based on the number of people that kept asking... are you sure? during the process.
Are you sure you don't want it stained? Are you sure you don't want pre-finished? Are you sure you don't want a higher gloss finish?
I like that it is not stained, because scratches show less. Same thing for the low sheen with dust, scratches, dog hair, etc.

I don't know how "hot" but we went with a wider plank weathered-look engineered hardwood for our downstairs. I really love it. I think wide plank can be difficult for wood in some areas because of buckling but if you want to get that look with LVP it's probably pretty easy.

We just did a full first floor remodel and did hardwood floors. They are prefinished and almost matte. Just barely any sheen on them. We did light gray kitchen cabinets and they have variation in color that goes between brown and brown/gray. I really like them. Easy to clean and they don’t show dirt/dust.

I would side wide plank and a weathered look (something with some gray in it) are 'in' right now, but floors are something that I really wouldn't worry about trends for and go with what you like.
We bought recently and our house has traditional oak hardwoods on the main floor, and a wide gray lvp in the basement. Neither is what I would pick if we were doing floors, but both are fine and neutral enough to not really bother me. I would also replace our hardwoods with lvp given the chance even though that is sorta sacrilidge, but I have 2 big messy dogs who drip water all over the hardwoods, and even though I keep a rag on the floor to wipe up after them, they show dried water spots constantly and never look really clean.
In our current/old house we installed Coretec Portchester Oak LVP and I loved them (still do). We got LVP b/c of dogs/kids/pool. New house has wide plank wood floors in a lighter color and now I love them too. No pool, so not worried about water as much, but I see less dirt, scuffs, scratches (and they are beat up, but you can't really tell). I am guessing it's mostly b/c of the lighter coloring.
I still love the look of wood look tile. I think some think it's going out, but to me, it's a sturdy product in a great pattern.
We have hardwoods in a medium stain, but ugh after 5 years with a dog and kid and us being home with COVID, OMG. They're going to have to be refinished in another 5 years I'm sure.
Thanks all. I have no idea how many options I’ll have but I think I want to go light matte flooring. We have wood look tile, and it looks good now. I live in CA so cold isn’t an issue.
I am seeing a lot of light floors in our area. Tile (incl. wood look) floors are very popular here since a lot of people have pools. I like tile but DH doesn’t so we went with engineered hardwood. We have medium/dark brown and we still like it.
