Tonight we had leftovers. Tuesday - pork butt in the crock pot, roasted apples and brussels sprouts Wednesday - more butt (hehe) and kale Thursday - Pumpkin, Pear, and Fennel soup (soooo good) Friday - more leftover "butt" and ??
Monday - chicken taquitos (these freeze beautifully so I actually made a ton earlier in the month and DW just had to take them out of the freezer and throw them in the oven). Tues/Weds - Yom Kippur seder at Bubby's Thursday - homemade pizza (I'll make the veggie-loaded pizza sauce on wednesday) Friday - sausage and peppers with whole wheat egg noodles and leftover secret veggie sauce

I have no idea what we're doing. Last night my wife had leftover pizza at home and I went to Panera with my family. Tonight we'll probably have some leftover pot roast that I made on Sunday. Other than that I don't know! I really want to be better about meal planning, though.

I have no idea what we will be eating this week. I came downstairs this morning to find our freezer has been open since last evening. Everything is a loss. I am so mad.
Monday - L was out and the kids had mac and cheese, turkey dogs, corn, and strawberries. I ate whatever they didn't eat (which wasn't much and I went to bed starving.)
Tuesday - L is out again and the kids are getting Happy meals.
Wednesday - L will be home and I have honey mustard chicken breasts that need to be cooked and whatever frozen veggie I can find. Throw in some pasta for the kids.
Thursday - No idea. Perhaps chinese chicken salads (unless I fix it for our lunch this week.)

Ugh, this happened to us a few weeks ago and I was so upset.

This sounds good! Recipe? I'm guessing they're a whole lot healthier than the ones you find in the freezer section at Target.

But, i'm not actually very good at following those things In reality all I did was crockpot salsa chicken (chicken + jar of salsa + taco-like seasonings), then shredded the chicken and added cream cheese, corn, black beans and a little more salsa and used that to roll up a little tortilla.

I've made the recipe from Annie's Eats and we LOVE it. I add the black beans like Annie suggests to stretch the filling. Though I find the 425 temp to be a little hot, particularly for the frozen ones. So I set it at about 350-375 and this makes sure the filling gets warmed through before the outsides are too brown!
Oh nice! I do crockpot salsa chicken a lot, and then use it as filling for quesadillas. This is a great idea to have basically the same dish, just all rolled up and ready to go, rather than cooking each in the frying pan! Definitely going to try it
