Our original vanity went all the way to the wall on the side. We replaced it with a smaller vanity so there is a gap between wall and vanity of a few inches.
We had some water damage so I need a new vanity again. The gap kind of bugs me but I don't love the look of it butting up against the side wall.
If you like pedestal sinks, that can be a solution. You don't go all the way to the wall, but you also have room at the bottom to clean. However, having had a pedestal sink in the powder room in both our last house and our current one... I can't wait to put a vanity back in, with some storage.
I would either do a counter that goes all the way to the wall OR do a floating vanity which will allow you to clean the floor under anything that falls.
In reality I will probably go all the way to the wall with a vanity because I hate creating tiny areas that are impossible to paint, when I opt to change the color of a room.

If the sizing is such that the gap would only be a few inches, I'd do wall to wall. Our current powder room has a good 2 feet on each side of the vanity and that has been fine. I loathe pedestal sinks. Our master has vanities that go wall to wall and those don't bother me at all, I actually love the extra counter space.

I would absolutely go all the way to the wall. Based on size restraints my half bath vanity has a 4 inch gap between the vanity and side wall. It looks fine, but it's a pain in the butt to keep clean.

We are changing a powder room to a 3/4 bath so not exactly the same but we are facing the same issue.
We decided to go the full width. If we had left a gap we would have put a hamper or something there to fill the space even though we don't really need anything in the space.
Our width is 60" so luckily we had standard sized options.
It depends, I think, on the width of the space. In a narrow powder room, I think a vanity that fits wall-to-wall works but a pedestal might give a sense of space if the room is really small. My vanity is 36" which works well. My mom's PR is slightly narrower than mine. She has a pedestal which looks nice. She wants to update with a modern wall-hung sink. She has an open shelf above the toilet with a basket for spare rolls of TP and the linen closet is steps away. The storage under a 24.5" vanity is going to be largely filled with the plumping lines.
I’m ok with the style that looks like a furniture piece with legs, so you have gaps on the sides and at the base, which means you can clean the floor underneath and on the sides. It’s definitely easier to clean a full built in, though. I don’t like pedestal sinks from a functional or storage standpoint.
