I have a 7.5 year old! Hope she heals quickly. This must be really tough!
—LCD writing boards —Any books she likes??? Some of a series? You’d have to ask the parents. DD likes Unicorn Diaries lately and we are doing Boxcar Children as a read-aloud —I really like Usborne brand activity books (not a seller). The sticker books (“sticker dolly dressing” and similar) are great. DD loves those. I also like the magic painting (water paint) ones —Crazy Aaron’s putty where you have to find little things in it, and a bin or tray so it doesn’t get on the bed if she is in bed. The “make your own putty” kit is cool too but would require some help —My daughter loves Barbie and those crazy Barbie movies—you’d have to ask the mom again if she is into that. There are Barbie sets with Play-dough stuff that might keep her busy —coloring books and colored pencils —lap desk? —ThinkFun rush hour game —sushi-go card game, Uno, Sleeping Queens
My 7-year-old is trying to get the hang of the potholder loom thing, that might be an idea. My daughter also likes fiber knitting but I'm not sure if there is something with specific instructions on that vs having someone teach you. Maybe perler beads? Could be messy in a bed, though. I like the idea of a little lap tray to do things on.
When E was in her full leg cast, we did a lot of legos.
Rainbow Loom Coloring
ETA: I don't know your budget, but my mom sent a rolling table that we could roll right up to the couch and we used that a lot. So maybe see if she plans to get one of those or offer.

If she's into arts & crafts, maybe some craft kits (jewelry making, friendship bracelet making, etc.)? Also the clothing designer template kits (where there are different plates with dresses, tops and bottoms), I know Melissa & Doug makes one.
Is she crafty. When I was about 8 I had a friendship bracelet “business” & would crank those things out. Since 80s-90s stuff is cool again maybe a how to book & supplies?
or air dry clay?
My youngest loves Exploding Kittens game but that requires someone else.
You could also do “movie afternoon “ supplies: gc to Amazon for movie rental, microwave popcorn, a box of candy, & a fancy drink (maybe soda or maybe mango juice or something).
Our gym family did this last fall for one of the girls who fell and broke her arm in 3 places. A large squish mellow pillow to put under her arm or between her arm and body was a huge hit. The basket had lots of her favorite snack foods, fuzzy socks, fuzzy blanket, simple quick games, and we paid for a couple months' worth of Netflix.
As a mom I 100% loath those craft sets. DD even at 11 has the hardest time accomplishing them without help. I would rather pay for the painting tutorial zoom classes and all the stuff that goes with that because someone else is walking her and the group through step by step. If she is into painting, they have some free one's through Facebook live.

My 7 year old daughter is super into air dry clay lately.
She also loves taking art classes on outschool.com- maybe some art supplies and a small outschool.com gift certificate? (15 would be plenty-not sure of your budget).
