Seeing all the reservation questions made me think to ask -
We are going in early 2023 for what I think will be our once in a lifetime trip. We are spending 5 days at DW and 3 days at Universal. Our kids will be 13, 9 and 6. My kids are very basic eaters, and we all eat vegetarian (we keep kosher so we only eat kosher meat). Italian and Mexican are always a hit. DH and I are also willing to make the kids suffer if there is a meal we really want
What restaurants are must-dos based on these limitations? I’ve been reading about them but would love personal experiences/recommendations.
You would probably like Sanaa in Animal Kingdom Lodge. They have a lot of vegetarian options and the bread service is so good.
All restaurants in Disney have vegetarian options so I would just study the menus and see what sounds good. I find the restaurants in the hotels are better than the ones in the parks. No advice on Universal. Haven't been there in so long!
I don't have specific recommendations based on the vegetarian specificity, but I do recommend making reservations. Make sit down reservations for at least lunch and dinner and then cancel as needed. It's even a good idea to make a 4pm and a 7pm dinner reservation to give you options (if you want to skip lunch, then take the 4pm one for example). Reservations were an absolute must-have. We were not able to find any walk-in places, especially around/in Universal, and that made for some miserable, very hungry times.

My son is a pescatarian. We’ve enjoyed meals at the restaurants at the UK, France, and Italy pavilions at Epcot. I also remember liking the vegetarian pasta at Mama Melrose (Italian) at Hollywood Studios. It’s pretty easy to find cheese pizza or Mac and cheese at quick-service restaurants.
At Universal City Walk, we liked the Toothsome Chocolate Emporium. The food was good, and they have huge/impressive milkshakes (big enough to share).
We just got back today from Universal and WDW. At Universal, I really liked Mythos in the park. I had a vegetarian couscous bowl that was surprisingly good for an amusement park. My kids had buttered noodles and zucchini.
At Disney, we didn’t make reservations in advance so just did whatever walk up was available on the app. We ended up with the Jungle Navigation place in Magic Kingdom (great falafel and variety) and Mama Melrose’s (basic Italian). We snacked around Epcot and Animal Kingdom.
This trip was planned a week in advance. It was super hot, so we didn’t eat that much. On previous trips, we liked O’Hana, the Snow White dinner at Wilderness, Sci-fi, 50’s diner, etc.

Even though every restaurant/counter service has a vegetarian option, it is often literally ONE option. So I wouldn't bother going to places like Be Our Guest, for example. There's more choice at the non-park places like the Rainforest Cafe outside of Animal Kingdom.
Since it's once in a lifetime, I would book one of the character breakfasts that is served family style (I don't think any of the buffets are open yet).
The San Angel Inn in Mexico/Epcot has an actual vegetarian menu, the quick service taco place is decent too.
I also like the quick service in Morocco for something that isn't just pasta or pizza.
In Animal Kingdom, the bowls at Satuli Canteen are good and you can customize them.
Hollywood Studios is a bit of a crapshoot, but the plant-based Totchos at Woody's Lunch Box are good and so is the vegetarian wrap at Ronto Rosters.

The satuli canteen bowl was my favorite quick service meal.
We were not fan of the Mexican restaurant at City Walk. All of the restaurants have their menu's online. Also recommend Toothsomes DH and I split an appetizer/meal so we could do dessert. They have a waffle on the kids menu my kid ordered (it does come with bacon, but I'm sure they can leave that off as a side).
Do mobile ordering for voodoo donuts in City Walk, much better than waiting in line.
