I'm glad you asked, because I'm struggling to decide what to bring to Thanksgiving for dessert. Normally I bring a pumpkin roll and/or apple crisp, but I kind of want to branch out.
I was thinking maybe cranberry white chocolate chip cookies, but idk.
Definitely do a bar in this scenario - so much easier to serve. Also if you want to make pumpkin of course that's on theme but as someone who hates pumpkin I usually like to do an alternate like chocolate or apple.
Pumpkin pie with the Pillsbury crust and Libby's canned pumpkin (and Libby's recipe) is SOOOO easy an super easy to double. I would double that Libby's recipe and make two pies.
Or the pumpkin bars with cream cheese frosting, but that's more work.
It is definitely not very Thanksgivingy but I always recommend black bottoms for large events. They are super easy to make especially if you want a large amount and are just grab and go.
I usually make a pumpkin gingerbread bundt cake. Super easy and makes a ton. I have the recipe at home, but I want to say it's from the McCormick website?
We’ll have pumpkin pie bc the kids love it, it’s tradition, and there’s only six of us. If I could justify an extra pie, and my kids weren’t in braces, I’d also make a derby pie (chocolate chip and pecan).
I would also suggest banana pudding for donating. Can make a good size pan, easy to serve, really tasty!
I realize the need to make something in massive quantities that’s easy to eat….but I imagine the people who receive these donations would love traditional thanksgiving dishes — apple pie, pumpkin pie, pecan pie. I would probably try to make as many mini-pies as I could.

I second the pumpkin pie with Pillsbury crust & Libby's, but substitute half and half for the evaporated milk.
