I’m trying Kodiak protein pancakes this weekend! I’ll try to remember to come back and update. We have the Kodiak flapjack power cups and she seems to like them. We need to try to find some ways to up her breakfast and protein intake so I’ve been trying out some different things.
This isnt a true pancake texture, but my super picky 4yr old loves it. 1 banana, smooshed all up 2 eggs 1 T oats Cinnamon Mix all together and then do 1/8c pancakes.

My kids and I are partial to the Hungry Jack Complete Extra Light and Fluffy mix for pancakes, so when I want to make it have extra protein, I add a full scoop of actual vanilla protein powder and then like a 1/2 tsp of vanilla for every 4 pancakes and then increase the water to the consistency I want. My kids and I both like that and can't really taste much of a difference, but I feel like it increases the protein enough that I'm happy with the amount we are getting.
Or I do 1/2 and 1/2 the kodiak and the hungry jack mix.
My kids (well, 3/4) like the frozen Van’s power protein waffles. No one likes Kodiak, unfortunately. My husband does breakfast solo with them because I have to leave for work before they wake up, and he buys them the cheap sugary frozen pancakes which pretty much guarantees they won’t like any of the “healthier” options.
We use kodiak. The kids don’t like it as much as the regular pancakes my mom makes them. I’ve had better luck using the kodiak mix in place of flour in baked items, like muffins or banana bread.
I prefer the frozen Kodiak waffles to the mix. They are more expensive, but much better in my opinion.
I also make cottage cheese pancakes similar to the ones listed above. I include a teaspoon baking soda, vanilla, and cinnamon. I also usually add pecans.
