I have this sirloin tip roast but it’s very thin—maybe an inch and a half and I can’t figure out what to do with it. It seems too stubby for pot roast but too tough to serve rare.
If I figure it out that will be two meals.

Sunday: stuffed peppers Monday: cheesy kielbasa pasta Tuesday: leftover peppers Wednesday: pork loin & roasted potatoes Thursday: my birthday, so I'm not cooking and told DH to pick the restaurant Friday: We leave for a weekend trip for my birthday. Lot's of gluttonous eating on the horizon.

Here you go. The orzo one uses spinach, but I am not a huge fan so I follow the recipe and omit the spinach and just roast some green beans

What's your French onion soup recipe (if you make it yourself)? I'm still finding one I like.

We ate fast food last night (which gave me heartburn, naturally) Tonight is leftovers - Asian chicken drumsticks and/or pulled pork sandwiches Wednesday is pork chops with mashed potatoes/gravy and salad Thursday is pulled chicken BBQ sandwiches and frozen fries or tots Friday is order out since it's DH's birthday weekend Saturday is out at a restaurant for DH's birthday
Sunday: salmon bowls with cucumber, avocado, and sugar/vinegar rice Monday: tacos Tuesday: pasta and potato soup Wednesday: wild rice and mushroom casserole Thursday: Friday: Mac n cheese
I just made a sheet pan meal, one of my go-to's for an easy dinner. This one was potato/carrot/kielbasa.
Wednesday - Chicken and gravy w/ roasted broccoli
Thursday - My H has his bowling league night so something easy for the kids, probably mac&cheese
Friday - Probably go out to eat
I want to prep some stuff over the weekend - shredded chicken, rice, etc, and just have that ready to go for meals next week. I WFH and as much as I would like to think I will cook during the day, reality is that the day flies by and I am left struggling to pull something together last minute.
