My lunch is kimchi fried rice to use up some kimchi we have around. And maybe some easy miso soup to stretch it.
Dinners are veggie chili, Peruvian style chicken w black beans/rice & green beans, Japanese cabbage pancakes & probably a veg, & leftovers of each meal.
I normally phone it in but I’m trying to eat more veg & less salt to help with feeling bloated so there’s more effort going into this week, lol.

Yes, same. I’m just getting veggie soups to help those efforts. I’m also adding fruits with/as my snacks during the day.

M lobster tails + asparagus T rotisserie chicken noodle soup W Costco spinach cheese manicotti take & bake Th junk because of event at daughter’s school
H starts purées Tuesday night, so I’m going heavy on soups this week. Chili, chicken noodle, and potato. The chicken noodle and potato are just from soup mixes.
Today is herb crusted salmon, broccoli and maybe rice. Monday grilled boneless pork marinated in hot sauce with onions and peppers. Tuesday cod with asparagus and tomatoes and jasmine rice Wednesday Tomato Soup, maybe grilled cheese Thursday hopefully leftovers Friday going out! Saturday sweet potatoes and turkey chili
For lunches I'm marinating chicken breasts for my husband to grill. I slice them and freeze and we can grab for lunch with a salad. We'll have some leftovers from the weekend that will go with our salads too.
I started weight watchers so I am cooking all weekend so everything is ready so I can stay on course. It's so much work! Yesterday I made stuffed peppers for dinner and I made veggie pita pizzas to stick in the freezer for myself. We usually get pizza on Fridays and one slice isn't enough and 2 is too many points so I'm premaking my own to pull out when it's pizza night. I also roasted chick peas with spices and they are delicious and will be great snacks when I need something crunchy. Today I made a sweet potato hash (so much chopping!!) to go with eggs for breakfast or a tasty side during the week. I'm doing that grilled chicken today and also making the tomato soup to have on Wednesday. Pounds better be lost. LOL
Today we're going to a food hall for a late lunch. It usually fills us up for the day.
The rest of the week is cleaning out the fridge/freezer because we're going out of town for quite a while, leaving Saturday. David will eat chicken thighs and the rest of the fruit I just bought (a ton to last us through the week) He also has bread and gouda cheese so I can make him some bacon grilled cheese sandwiches. Me and H will have shrimp tacos and chicken wings. There's also quite a bit of eggs and bacon, so maybe breakfast tacos at some point. I love that I don't have to go to the store this week!
We cooked last weekend and yesterday so it’s mostly freezer meals
S. Meatballs from freezer with homemade pasta M. Chili from freeezer T. Pork roast from freezer with potatoes and green beans W. Salads with either chicken or salmon R. Leftovers. F. Takeout. S. Whatever is on sale
For lunches I get two bags of salad mix, broccoli, cauliflower, and a red pepper and make a giant salad Sunday night. I scoop a portion out every day and add either a hard boiled egg or portion of chicken to top (I keep dressing at work).
Cajun chicken pasta with mushrooms and spinach Cheesesteak wrap with smoked ribeye Taco salad Grilled chicken thighs with shaved Brussels salad Maryland crab soup with a grilled sandwich or salad
Last night: chicken tortilla soup, which will make some nice leftovers for lunch Tonight: burgers; a turkey burger for me, since I'm trying to eat healthier Monday and Tuesday: honey garlic chicken with potatoes Wednesday and Thursday: chicken veggie tacos Friday and Saturday: kielbasa with potatoes and peppers.
I'm cooking an 8 lb pork butt today. Half will be bbq pulled pork, and the other half will be carnitas.
When we get tired of pork, I have a chipotle orange broccoli stir fry I want to try.
We'll have Cole slaw and green beans with the BBQ. Cauliflower rice, mango salsa, and beans with the carnitas.
Lunches are always hit/miss for me. I usually just eat leftovers (if it doesn't affect what we're saving for another dinner). Or I'll nuke a potato and eat with salsa and sour cream. But I'm making an effort for myself this week and making a kale salad that I can portion out and have with tuna (... and probably baked potatoes).
