You can do all 4 parks if you want. There's really nothing to it. If you are in one park and want to go to a different park, just leave and go to the different park. You'll go through the turnstiles just like normal.

Just be aware that transportation from park to park can take a while. I think it’s a great option if you are planning on taking a midday break or even if you have a car (at least in the past if you paid for parking at one park you could show your receipt at the second park and not have to pay again).
But the park to park buses don’t run nearly as often as the resort buses. Maybe not a big deal going from Epcot to HS but like from Animal Kingdom to anywhere else I’d build in a big buffer.

If you are staying on - site, your resort can also play a role. It is pretty easy to spend the day at one park, take a break then go into Magic Kingdom for the evening if you are on the monorail loop. HS and EP are convenient for those in the EP resort area. Having your own car definitely helps. You can alway add it on once you are there if you decide you want it. However, the price will be for the length of your ticket. You can't add it for just one day or two days.
One year pre-COVID, DD and I maxed out all 4 parks on 2 separate park hoppers. We did Magic Kingdom + Epcot one day, then Hollywood Studios and Animal Kingdom the other day. I did a combination of the extended hours available to certain resort guests, later closings, and making meal reservations for times that were before the park officially opened (a character meal at Hollywood Studios) or the last seating of the day right before the park closes (another character meal at Animal Kingdom). She was 5 that year and I still think back on all the fun we packed in with just 2 tickets for each of us. DS was only 9 months at the time so we brought him along to the Hollywood Studios portion of the trip. We stayed at the Four Seasons that year. I don't remember if we came back to the hotel between parks. I feel like we didn't on the MK/Epcot day. On the HS/AK day, I think my husband met us at HS to take DS back to the hotel.

We have only stayed on the monorail loop or within walking distance to Epcot, but we’ve really liked the park hopper. Out last visit (May) we hopped almost everyday. We really liked hopping to Animal Kingdom with about 90mins left before the park closed. We got so much in and ending the day in Pandora got us on the rides super fast. We’ve also hopped from Epcot to HS for dining reservations and Genie plus availability- that is really the only set of parks where the 2pm rule could get annoying. When we stayed on the monorail hopping into MK was super easy, but I don’t think we would have made the effort if we’d been further away and unable to take a break in the middle for a bit.
Are the reservations going away or already gone? I also had park hopper tickets on our trip last year and it was extremely annoying. One day we didn’t check into the first park we had reserved so then they wouldn’t let us into the second park after 2 pm where we had a dinner reservation. On a different day only DD and I went to the first park because DS was being a bear about leaving the hotel so my husband stayed back with him. Then they gave us a hard time again that evening when all 4 of us were trying to go to the second park. Even though it eventually did work out, it took a lot of “I need to speak to the manager” effort which made park hopping feel very unmagical.

You can use the monorail to hop between Epcot and MK-you do have to switch lines.
If you are hopping between Epcot & HS-use the back exit of Epcot (between England and France) and take the Skyliner. You can also take the boat (slowwwwwww but peaceful) or walk (about 20 minutes, in the blazing sun. Only to be attempted in cooler weather).
Animal Kingdom takes forever to get to, no matter what.
