My 13 year old has recently decided he's going to be a vegetarian, and in looking over the menus at some of our go-to Disney restaurants it doesn't look like there are many veggie options. Any vegetarians here who have recommendations for go-to meal spots--table or counter service--that have a good variety of vegetarian dishes? If it helps we'll be staying at the Beach Club.
Disney is amazing with food accommodations and within the last couple of years have added a ton of plant-based options. Most menus offer at least one vegetarian option. Being at beach club you'll have access to the world showcase entrance to Epcot and all of the countries (or nearly all) have quick service and sit down restaurants. Plus if there is a festival going on they'll have veggie options at those booths as well. Animal Kingdom lots of options as well. You can download the my Disney experience app and take a look at the different menus of places you want to eat ahead of time too!
We stayed at animal kingdom lodge and there were a lot of veg options, but a lot of them were spicy. A lot of lentil stew type dishes. It was buffet style, so your son could try a little bit of everything. We liked it so much that we cancelled our reservations at other places and just headed back to our hotel to eat on many nights. My kids were 5 & 8 so not the most adventurous diners back then but they found plenty of options that they liked.

While more or less every dining location has at least 1 vegetarian option, typically it is literally ONE option (plus sides). I'm trying to think of any place, other than a buffet or food court that has more than 1 veggie entree. Satuli Canteen in Animal Kingdom is maybe the best quick service option, because you customize your bowl.
If you are there during Flower & Garden, Festival of the Arts, or Food & Wine Epcot will have way more choices with the food booths.
