It’s nice to be back home in my own kitchen. Tonight: corned beef with cabbage, potatoes, carrots and potatoes in the crockpot since we were out of town for St Patrick’s Day Monday: sheet pan chicken fajitas Tuesday: Asian chicken salad Wednesday: taco quinoa around a possible track meet and basketball game Thursday: tuna melts and potato salad
Sunday - smoky fish stew with spaghetti squash Monday - miso salmon and asparagus bowls (with tofu because I couldn't find enough salmon) Tuesday - giant chef salads Wednesday - leftovers Thursday - leftovers Friday - do I have to?
We thought H's family might invite us for Easter, but we haven't heard anything yet. So I need to start thinking about that I guess. I don't want to. Neither of us are super religious, but we like having excuses for holiday food. I'm just very blah about it right now.
Ha, I did corned beef and cabbage on Friday since DH was OOT on St. Patrick's Day. I'll be finishing off those leftover tonight.
Sat: I threw together zuppa toscana for DH and I, DS had leftover real ramen from his birthday dinner, and DD made herself a fancy ramen pack w/ egg Sun: whatever we can find in the fridge/freezer Mon-Tues: OOT for a couple of days Wed: grilled pork tenderloin, roasted sweet potatoes, green beans Thurs: not sure, I've got an awkwardly timed haircut and then DD has a friend coming over so it's probably a FFY night Fri: Greek-ish apps- chicken skewers, hummus, pita chips, yogurt dip, cucumbers/tomatoes/peppers, olives, maybe frozen spanikopita Sat: burgers, veggies & ranch Sun: hosting Easter- I'm making lamb and potatoes, and baked lemon pudding for dessert, my parents are bringing salad and cheese/charcuterie, not sure what friends are bringing yet
Sunday: pasta w/ meat sauce made with chicken sausage, salad, garlic bread Monday: Emily Bites chili lime chicken bites + yellow rice Tuesday: turkey kielbasa and roasted tortellini & veggies Wednesday: Skinnytaste cheeseburger casserole Thursday: salmon rice bowls Fri/Sat/Sun: TBD but probably mostly dinner out or takeout, we have lots of activities going on Easter weekend. Easter will be steaks etc. at my moms.
We leave Friday mid-day for a long weekend in a cabin to start spring break, so cooking will be easy stuff.
Tonight is leftover pizza from dinner with my parents last night.
Monday/Tuesday- chicken Alfredo Wednesday/Thursday- grilled chicken sausages Friday - home chef pizza flatbreads I had bought for tonight, but when we had pizza last night.
Spring break week here. We are also hosting a big meet on April 6/7th so may be prepping my lead role a couple nights so everything is up in the air. Sun-Fettucine with homemade sauce and chicken strips Mon-pot roast with carrots and onions Tue-leftovers Wed-? Thurs-hamburger helper Fri-? We are 100% ignoring Easter this year because I just don't want to deal with it.

We lost power for a few days last week, so had to toss a ton of stuff. I got some food to get thru the weekend, but still missing main things, like mayo, and have no plan at all for anything.
Plus Wednesday I am handling a major public health event at my work, so I need easy.
I might just do noodles with marinara, or take out until Thursday. Who knows. I’m preemptively exhausted Lol
Tonight-chili Mon-stuffed shells from aldi/salad Tues-butter chicken, naan, veg Wed-?!?! Thur-picking up something on the way home from retirement party Fri-gas station pizza? Driving to my parents Saturday-Sunday holiday at home.
Sun: Pizza stromboli (the dough is rising as I'm typing this)
Mon: Leftover meatloaf & mashed potatoes (thanks Costco!) and Taylor Farms Green Goddess salad
Tue: Leftover takeout fried chicken for H, ham and turkey sandwich for me
Beyond that I don't know. Maybe lemon blueberry French toast bake. I have a ton of frozen blueberries my SIL gave me, and some lemons languishing in the produce drawer. Maybe also quinoa enchilada casserole, but for that I'd need a couple things from the store.
I'm back into "meal planning and grocery shopping is bullshit" mode, and would like to eat nothing but takeout and overpriced pre-packed meals and salads from Costco.
Sunday: Fed at a bike club meeting (Mediterranean) Monday: Leftovers + a veggie Tuesday: veggie chick'n cutlets, rice or pearled couscous, veggie Wed.: tofu burrito Thursday: not sure, maybe plans with a friend Friday/Sat.: TBD, still eating stuff from the freezer/pantry
