I am reducing my carbs these days, mostly white bread, white potatoes, white rice, some pasta, and most sweets. Usually 5-6 days a week.So that reflects my meals.
Taco salad with chicken and a wheat tortilla
Chicken, peppers, onions, with rotel and taco season over cauliflower rice and cheese.
Grilled chicken buffalo wings with Brussel sprouts
But tonight we're going out for pizza for a friend's birthday, so obviously not a lower carb day.
I made chili last night. Tonight: gnocchi with homemade pesto Wednesday: lentil curry with rice and naan Thursday: crock pot chicken tacos (I'm feeding two extra kids for the week starting on Thursday so everything's about to get real simple)

I came home from work last week to bags on our porch and we didn't order anything. Turns out the Uber delivery driver dropped it off at the wrong address. I called the store, but there isn't anything they can do and they did say they would refund the purchaser. So anyway, we got probably about $200 in free groceries.
We got Salmon, ground turkey and chicken for the meat, so we are doing a marinated grilled salmon tonight. Saturday we did chicken parmesan. Sunday we did stuffed enchilada shells. We use a different recipe but this one is very very similar. lifewiththecrustcutoff.com/enchilada-stuffed-shells/
I'm not sure what DH has planned for Wed/ Thurs as he did the menu.

M — French toast, fresh fruit, bacon Tu — manicotti, roasted mixed vegetables W — need a slow cooker recipe? Th ? F ?
Last week I made slow cooker Italian beef and it was a hit.
2 pound chuck roast 2 packets Italian seasoning Enough water to just barely cover most of the meat (2-4 cups) Rub one packet on each side of the roast and cook on low for 6-8 hours or high for less. You really can’t mess it up. Once cooked shred. Serve on your choice of roll/hoagie/sub and top with whatever you want. We like them plain dipped in the au jus.
librarychica, a pork roast and then shred and do pulled pork sliders one night and use leftovers for loaded nachos or just freeze the rest for a quick dinner later on?
Today everyone has something going on and I have 4 glorious hours home alone so it is a fend for yourself night! Tomorrow-roasted chicken, baked potatoes, veggies Thurs-enchilada bake very similar to this www.amomstake.com/slow-cooker-chicken-enchilada-casserole/ Fri-chicken sandwiches

sandandsea, I’m going to get a chuck roast next week and try that!
I think tomorrow it’ll be lentil & sausage stew in the crock pot. Blackened tilapia with yellow rice and black beans either Thursday. H wants to make chicken wings Friday. Am I the only one who doesn’t get chicken wings? It’s so much work to eat, so little payout.
librarychica, they are just OK for us, but I have to admit we rarely eat them maybe 2 times every 5 years or something. We would prefer other cuts for grilling.
M - Beef and broccoli with rice T - DH and I ordered out sushi W - Salad with asparagus, goat cheese, and some kind of protein (DH brought home 4 lbs of greens from work) Th - Pasta and salad F - on vacation!
