Tonight: hoagie blts, green beans, strawberries Monday: tortilla crusted tilapia, broccoli, rice Tuesday: lasagna soup in the crockpot Wednesday: cheeseburger casserole Thursday: cheese tortellini bake Friday: DH and I are going out for our 25th date-a-versary!
I just realized we’re really pasta heavy. We may have something besides the cheeseburger casserole. Maybe a night of leftovers in there instead.
I was out of town this weekend, but the boys had a family dinner with MIL, GMIL and BIL on Friday. They had Asian-marinated flank steak, green beans, and rice.
Tonight-gumbo Monday-Patty melt Tues-breakfast casserole Rest of the week? Pulled pork? Soup? Friday quesadillas? picking up salsa, chips, queso from a restaurant.
Sunday - grilled cheese Monday - sweet and sour chicken with rice and roasted veggies Tuesday - h is oot, take out for the kids Wednesday - brinner Thursday - breaded cod and salad and maybe rotini
Sunday: lemon pepper iced tea chicken + strawberry quinoa salad, both from Emily Bites. The chicken was tasty! It was marinated in some unsweetened black tea, lemon, honey, garlic, and oil. Monday: Emily Bites honey coriander chicken bites Tuesday: salmon Caesar salads - just me roasting some salmon with a bagged Caesar Wednesday: Skinnytaste chicken club wraps Thursday: Skinnytaste Korean beef bowls

Tonight - Stuffed peppers Tomorrow - Barbacoa tacos Wednesday - either chicken alfredo or out in college town for oldest kid's birthday (depends on the weather) Thursday - chicken, mac n cheese, broccoli or the chicken alfredo we didn't eat Wednesday Friday - leftovers Saturday - we'll be at a Supercross race in Denver so we'll have stadium food Sunday - out after oldest kid's production
I'm already missing last week when I didn't have to plan or prepare any meals, food just showed up in front of me. What a life!

No idea past that, I need to do a more thorough look through the freezer/fridge to see what I've got on hand.

isabel, I think you shared that tikka masala recipe before and we’ve been making it. It’s so so good. We had it last week and the leftovers are my dinner tonight!

Sunday: I got a new grill, so we ate all the grilled food - Ribeye, Potatoes, Shrimp, and Zucchini Monday: Chicken Tacos Tuesday: Pulled Pork, baked beans, potato salad Wednesday: Pan cooked Steelhead Trout, steamed broccoli, coconut rice Thursday: Chicken sausage with peppers and onions, plain rice Friday: no idea Saturday: still no idea
S: we had chicken Caesar salads with grilled chicken and homemade croutons and dressing. M: burgers, pasta salad T: homemade pizza and wings in the airfryer with veggies W: I'm going out, H and DS are on their own Th: we have a fundraiser for my niece's softball team and there will be food trucks, so we'll eat there F: grilled chicken, shrimp and veggie kabobs with homemade pita bread and tzatziki S: dinner at my parents for my dad's birthday
Well this morning I realized I'm missing ingredients for two of the dishes planned so...need to go to the store tonight and do real grocery shopping for staples. I've just been going in for on sale items lately.

SA - chicken scallopini with salad and bread SU - smoked ham, smashed potatoes and salad M - either chicken taco bowls or chicken pasta with boursin cheese sauce - TBD T - the other chicken dish W - leftover ham in something - maybe a bean soup Th - pasta dinner at DS's school for his capstone F - I fly out on a business trip - so DH/DS will probably order pizza
Just want to update that this was SO GOOD. Doesn't need both the carrots and the cabbage- both give good texture. Could take or leave the red bell but the avocado and cucumber is necessary. The dressing was very peanut-y so I added more lime juice. And with everything, I added way more fish sauce and sriracha than listed. It would be great with fresh diced mango.
