Sun: Leftovers (we had a big lunch and I didn’t feel like cooking) Mon: Delivery (I’m in office and will rush home for DD’s band concert #2) Tue: Carne Asada Burrito Bowls Wed: Fettuccine Alfredo with Broccoli and Grilled Chicken THurs: Crock Pot Chicken, Rice, and Veggies Fri: Burgers and Oven Fries Sat: No idea - I imagine we’ll have the ILs over for a big lunch, so probably just graze/leftovers that night.
Tonight: poblano chicken enchiladas, guac and chips Monday: skinnytaste orzo, sausage and spinach Tuesday: chicken gnocchi soup Wednesday: leftovers Thursday: possible leftovers again, or pulled pork in the crockpot with some veggie on the side Friday: I may tell DH he’s in charge. I have a class I have to take for work Thursday-Saturday and I know I’m going to be tired and annoyed

Carnitas Burritos (mine was in a bowl) Gnocchi - cream sauce and chicken Pulled pork salad Gazpacho and pork chops Sheet pan chicken - sweet potatoes and green beans or brussels Goulash
Sun - chimichangas (robert irvine recipe), refried black beans, veggies - lettuce, tomatoe, guac, avocado, onion Mon - leftovers (chimichangas but also have french onion soup casserole left over from Saturday) Tues - Steak tips w/ gravy, egg noodles, veggies Wed - chicken thighs, sweet potatoes, broccoli Thur - Sat - out of town so husband/DS are on their own. There are freezer meals for them to choose, pasta/meatballs available, as well as eggs to make a frittata or breakfast for dinner.
Sunday: Salad with bagged greens + random veggies that needed to be used + cottage cheese. Dessert was organic vanilla ice cream with Trader Joes salted caramel topping Monday; TJ's "one pan" meal-either pasta or gnocchi + veggie Tuesday: soup + grilled cheese Wed: Tofu burrito Thursday: Not sure. Friday/Sat.: probably something from the freezer
Sun: bbq at a friend's house (veg/fish) Mon: prawns grilled with veg Tue: big salad Wed: MIL cooking (forget what she's making) Thu: pumpkin soup Fri: Fried tofu with sweet & spicy sauce
This weekend, I made zucchini boats, and sheet pan chicken tikka with roasted potatoes and cauliflower. That should last us through Tuesday, and maybe Wednesday. We'll do something quick and easy on Weds/Thurs, maybe eggs and bacon and some roasted broccoli. Then out to dinner on Friday!

DH is making the kids Texas chili tonight with sausage and beef. I'm working late. Tomorrow night we are having turkey tacos and guacamole. We've also gone crazy and switched the black beans to refried beans, ha ha. Wednesday I have a party so DH is making something. Thursday I'm making enchilada pie. It's a new recipe from better homes and garden.
Sun: Swiss steak with mashed potatoes, corn and salad Mon: grilled sausages with homemade mac n cheese and coleslaw Tue: burgers with fries & sweet potato fries Wed: chicken cutlets with some kind of potato and carrots Thu: beef kababs with rice and cucumber-yogurt salad Fri: out to a friend's, likely pizzas in their pizza oven Sat: probably out

Sun: Leftover molé, rice, and pinto beans with flour tortillas. Mon: Fried rice with leftover rice, freezer veggies, ham, and scrambled egg, and gyoza on the side. Tues: Leftovers (still have molé, will probably have fried rice as well) Wed: If meat is on sale, some crockpot meat Thurs: Local pub for post-kid-concert dinner Fri: Possibly takeout depending on how the week goes Sat: Maybe grilling depending on the weather
I have not wanted to even think about food for the past couple of weeks so dinners got... creative lol. Did have a couple of successes, though - one of which will make it into our regular rotation (https://www.punchfork.com/recipe/Chicken-Primavera-Spaghetti-Squash-Boats-Delish).
This week is more phoning it in with the planning and getting creative with what I have on hand.
S: healthier marry me chicken with coconut cauliflower rice and sautéed green beans M: Salmon, roasted mushrooms and broccoli, and leftover cauliflower rice T: tofu or chicken... and I really need to think of something besides stir fry... maybe broccoli radicchio salad (if the radicchio is still good 🤞) W: why isn't this week over yet? T: pan fried fish (tilapia or mahi)... fish tacos sound good? F: depends on my fatigue level. Could be meatballs. Could also be takeout. S: H said something about helping more with cooking on weekends. So I'm going to call his bluff and then we'll probably order takeout lol😂
