I am struggling this week. DD1 is like a whirling dervish trying to last-minute pack for camp. DD2 just got a pneumonia diagnosis after 2 trips to the dr and 7 days of fever. It’s hot here. Tomorrow will be 100°. So I don’t know what to cook…
Sunday: bourbon marinated steak tips, corn on the cob, tortellini salad.
Monday: chicken tacos
Tuesday: takeout salads after spending the afternoon at the dr and getting dd2 a chest X-ray, then picking up her meds.
Wednesday: ugh I don’t know
Thurs-Sat : up in the air as we might go to the beach house for a couple of days before dd1 leaves for camp.

tonight is orange chicken and rice Thurs-chicken tacos in the crockpot Friday and beyond who knows. My plan for the week is trashed after yesterday's disaster.
mae0111 and anyone else dealing with the heat wave: I know people in the North think if the crockpot as a cold weather thing. In the Deep South, it’s a hot weather thing because it doesn’t heat up the house like the stove or oven. So all things crockpot are our summer staples. We love salsa chicken and pulled pork.

We’ve had grilled cheeseburgers and Costa Rica inspired chicken/rice/beans so far this week.
I am feeling very uninspired. I have ground beef and frozen chicken but don’t feel like making anything. I always have pasta on hand so maybe I’ll do that Thursday night with meatballs. We will be getting fast food Friday night on the way to a race this weekend.

Italian Wedding Soup Meatballs: 1 lb. ground chicken 1 egg Chopped spinach or Tuscan kale (about a cup) *Cut up extra to add to the broth (about another ½-1 cup, depending on your preference)
Half sleeve of Ritz Crackers (I usually use whole wheat) Seasonings (to taste): salt (or garlic salt), pepper, turmeric, parsley (dry or fresh) Mix ingredients together and roll into small meatballs (about the size of a quarter). Sauté stove top or bake in the oven (I usually sauté). Set aside and cover on low heat. Soup Base 1 small onion 2-3 celery stalks 3-4 carrots 2-3 finely chopped garlic cloves 1 bay leaf Salt (to taste, about ½-1 tsp) About 1 tbsp olive oil 1, 32 oz. container of Chicken Stock (or you can use broth if you want to control the salt content)—you might need to add another small container (8 oz can or box)
1 cup of Israeli Couscous
Chop onion, celery and carrots. Set a large pot to medium heat and add the veggies with olive oil, salt and bay leaf until golden/tender (about 10 min.). Add garlic and let cook for about 1 minute (don’t cook too long or it will burn and get bitter). Add the chicken stock and meatballs, then bring to a boil. Add the cous cous and extra greens (spinach or kale). Cook based on timing on the box. If you expect to have leftovers, I suggest cooking the cous cous separately and add to individual portions (otherwise, the cous cous gets too saturated and can be gummy when you eat it leftover the next day). Serve with parmesan cheese and enjoy!

It's been a week of easy chicken meals here.
M-Frozen rotisserie chicken chunks in the air fryer with rice and teryaki sauce on the side
T-More frozen rotisserie chicken chucks with instant mashed potatoes. This took less than 10 minutes start to finish so it is my new go to meal when I'm short on time and don't want to cook.
W-chicken tikka masala with rice and garlic naan.

Yesterday for our delayed Father’s Day dinner I made Moroccan chicken thighs with Israeli couscous, raisins, chickpeas, and olives in the Instant pot, lentil rice, and giant salad. It was delicious. I’m eating leftovers for lunch now.
Tonight is teriyaki chicken, rice, edamame and cucumber salad. Tomorrow is black bean tacos with chips & guac
I bought a 50lb bag of premium baking flour over the weekend. DD is baking a lot and all of our bread recipes call for 6 cups at least so I expect us to use it before the summer is over. I just ordered a 50lb food storage container on wheels to store all this flour.
Today-chicken strips, pasta, corn salad Tue & Thurs-fend for yourself as no is home Wed-breakfast Fri-DD ravioli, me take out after the eye doctor, DH who knows if he is going to be home
