Would you snack around the world at Epcot during the International Food and Wine Festival, or would you make a dinner reservation?
Going with my husband and DS who will be almost 12. His brand of picky eating is tricky, we were planning on Chefs de France because he wanted to eat ratatouille at Disney, but it has quinoa on top so I showed him a picture and he said he doesn't want it. So now I'm not sure about dinner. He would eat pizza and Mexican food, no problem but then I think that's normally what we eat when we go out at home so I'm not sure if we should just snack.
We were there last year with three kids who are all picky eaters and I would say that eating around the world should be just fine. We had a reservation and ate a full sit down meal and then kind of regretted it. My kids maybe would have just eaten pizza, but DH and I enjoyed snacking on foods that we don’t normally eat and felt too full to try everything that sounded interesting to us.

I think you will definitely be able to eat around the world, but I don’t have the patience to wait in that many lines. There’s always so much good stuff, but the lines have always been insane (to me) so we only get like one thing before I’m over it.

That's a good point, I hadn't thought of that. We haven't been to Epcot in 10+ years and I don't think there was a festival when we went.

There is an app, WDW Food & Wine, that updates with each festival. You can check out the menus, mark items as want to try/favorites. There are some filters you can use.
If there are a couple of spots near each other that everyone wants to try it can work. However if 4 different people are any 4 different booths spread across the park it can be time consuming to get to everything.
I would potentially try the booths but have a QS in mind if the line seems too long or it is just not working out.
The times we've attempted eating around the world we've typically ended up with at least one hangry person and had to stop for QS. That said, on our last trip I made both kids (16 and 13) look over menus and reviews for the festival booths and highlight at least two protein-heavy dishes they wanted to try. We started eating much earlier in the day than we would have typically booked a dinner reservation (like before 5 pm), and it worked out pretty well. I think we wound up getting a pretzel in Germany for Kid 1, but that was it for non-festival food.
I would try Biergarten in Germany in Epcot. It's unique enough to satisfy you, but has some safe options as well. Breaded chicken, macaroni and cheese, potatoes, etc.
