I know it's Tuesday, but I'm trying to plan for the next few weeks before a trip to town this week and I'm already stuck after only planning meals for a couple of weeks and need inspiration!
Last few weeks have been low effort with DH OOT, lots of TJ's convenience stuff or quick meals with minimal clean up.
Mon: carbonara w/ peas Tues: TJ's bulgogi beef, microwave rice, green beans Wed: TJ's garlicky pasta w/ pre-cooked shrimp, broccoli Thurs: chicken nuggets, tater tots, apple slices Fri: school tailgate event had free food from local restaurants, super handy since I was also working the event Sat: out for Greek after DS's soccer game Sun: dumpling noodle soup w/ broccoli (NYT recipe) Mon: gochujang beef, rice, marinated cucumbers and avocado Tues: roasted smoked turkey sauage and potatoes, green beans Wed: pepperoni pasta (NYT) w/ peas Thurs: probably just going to let the kids pick fast food or fast casual, cleaners are coming and I don't want to mess with the kitchen Fri: roasted spiced chicken (NYT, I've got this seasoned and waiting in the freezer) w/ yogurt sauce, couscous, naan, salad

S: Baked ziti, salad, garlic bread M: Shepherd's Pie T: French onion soup, Caesar salad, prime aged NY strip steaks with garlic herb butter. It's our anniversary and we decided to eat at home to save money, since we're going on a nice vacation later this month as our anniversary celebration. I spent over $50 on steaks, $25 on other groceries, $20 at the bakery on dessert and almost $100 at the liquor store on a few nice bottles of wine (we'll only have 1 bottle tonight, but they had some decent sales and we were low on wine) It would have probably been the same price to go out. I was going to make a reservation at one of our favorite Italian restaurants and it's not that expensive. W: grilled chicken sandwiches, veggie kabobs Th: grilled pizza, air fryer wings, raw veggies with dip Fri and Sat: H is on a golf trip, so DS and I will probably order takeout one night and go out the other

Monday: spicy pork bahn mi Tuesday: Chicken satay and rice noodles Wednesday: cast party for my youngest Thursday: slowcooker pulled pork sandwiches Friday: takeout
Mon- roasted whole chicken, with roasted potatoes, and roasted carrots and onions Tue-enchilada bake (DD is eating the chicken from the crockpot with rice) Wed-gluten free spaghetti (fingers crossed these noodles work better) Thurs-beef stew (DD is calling it drunken stew as it has wine in it) Fri-Tilapia, rice, broccoli,
Any suggestions for good easy/quick or crockpot meals that are wheat and dairy free are greatly appreciated. For DD (13).
Sunday: David had youth group so me and H went out for tacos and margaritas Monday: Chili Tuesday: Sausage/kale/potato soup, with lemon and bacon topper Wednesday: leftover chili Thursday: leftovers? Friday: Date night The weekend is a shitload of weirdly-timed plans for David. I foresee picking up tacos here and there and hopefully going out as a family Sunday night. There's a wine festival I'd like to get to with my H if we can figure out logistics carting our teen around all weekend!

Not sure the rest of the week. H is away tonight and all next week. I'm away tomorrow. Saturday we will eat out before the Weezer concert. When my H is back in town, I want to make: pasta fagioli, white chicken enchiladas, and butter chicken

In the past few days: smoked pulled pork (DH), salad, baked beans, potato salad grilled teriyaki salmon with roasted broccoli and brown rice chicken tikka masala with basmati rice
Th - leftovers Fr - out for an event Sat - I'm hosting a girl's dinner party, caprese salad, fig and goat cheese salad, summer corn risotto, roasted chicken thighs.
Monday was grilled greek chicken, over a garden salad Tuesday we had a steak din er fundraiser wednesday Wednesday: cod fish tacos in wheat soft shells. I topped with sliced red cabbage I seasined with lime and salt. I also made a salsa up of avocado, mango, red onion, corn I cut from a cob, cilantro, lime juice...this was awesome and fast. tonight chicken noodle soup. DH isn't feel well and I feel like I might be fighting off a cold
Tomorrow pasta with a salad. Maybe a ground turkey meat sauce.
Saturday I'm working so DH will cook or the boys will just have to cook for themselves if he's sick.
Sunday I'm not sure yet but I'd like to do a nice family dinner unless it's hot, we will grill. haha
Sun: bacon wrapped steak medallions (from Costco), baked potatoes and Caesar salad
Mon: pan-fried haddock, fries and coleslaw
Tue: tacos
Wed: chicken kabobs with rice and barberries
Thu: grilled sausages on a bun, homemade mac n cheese
Fri: grilled burgers, sweet potato fries, salad
Sat: TBD
What section do you find the steak medallions in? MH and DS would love these.
It was earlier this summer that I got them, but they were in the butcher section (not frozen), like right next to the other steaks. They come in a package of 8 or 9, and they’re individually wrapped inside, so it was easy to just grill a few at a time and freeze the rest.
Me: How about cashew chicken stir fry tonight? We haven't done that in a while.
H: Ooh, yes! That would be great for Thursday. With the avocado and green onions?
Me: umm... no, the stir fry?
H: Yes! The curry, right? With cashews and avocado 🤗
Me: *head tilt* do you mean massaman curry (which I have never made)?
H: I guess? That has potatoes though. I don't want potatoes. Don't we make like a brown curry with chicken and avocado and cashews?
Me: *thinking very hard* ...butter chicken?
H: YES! Perfect for Thursday 😁
Me: So... what do you want for tonight?
H: ...stir fry?
