I made this soup last week and it was so good! I did have quite a bit of additions- added one full fat can of coconut milk, a large russet potato to the roasting process, tripled the garlic, added chicken bullion, and added cayenne pepper. I also added lots of fresh rosemary and thyme when adding the roasted vegetables back to the pan. I'm making it again this week it was so good!
Monday, Tuesday and Wednesday are crazy busy with appointments and activities.

Tonight we had pizza because we cleaned all day and we were all exhausted.
Tomorrow - Skinnytaste Korean Beef Bowls Tuesday -Chicken legs with peppers and onions over mashed potatoes Wednesday - Jambalaya Thursday -Tacos Friday - probably leftovers Saturday - going to a bull and oyster roast
Kids and MH had chili dogs with peppers and carrots dipped in hummus tonight. I had a yogurt bowl
French onion meatballs over mashed potatoes, green beans Chicken tacos, grilled peppers, beans Protein waffles, apples, bacon We’ll do a night of leftovers and possibly delivery the night I have book club.

Sunday: Subway sandwich, Sunchips, and Diet Coke (hey, I was out all day and on the way home) Monday: Veggie Chickn cutlets, some side, and a canned veggie (I seem to have a million cans that need to get eaten and #nojob, so eating out of the pantry.) Tuesday: Soup+grilled cheese Wed.: kid's burrito that comes with a drink, cookie, and chips. It's pretty filling and less than $7. Thursday: Not sure-may meet friends at the cheaper pizza place Friday-Sat.: Something from the pantry or freezer

Yes, I love it. So easy for lunches or a side. There isn’t too much celery in it.

We’ve gotten it before too. LOVE it!! And the dressing is on the side, and in two packets, so you can just make half at a time.

Coming back from a week away, DH OOT again, so it is all super easy stuff:
Sun: scrambled eggs, hash brown patties, bacon, strawberries Mon: TJ's turkey burgers, broccoli Tues: TJ's kebabs, rice, salad, yogurt sauce Wed: orzo carbonara w/ peas Thurs: chicken nuggets, tater tots, apple slices (aka toddler dinner, lol) Fri: might have a couple of friends over to catch up over wine and snacks Sat: probably just order pizza with the kids
I really need to get myself together for next week with some make-ahead stuff, we've got evening stuff M-W and then I'll be home late-ish from work on Thurs w/ DH almost certainly still away.

I’ve traveled the last four weeks, so I’m excited to be able to have homemade food this week. And then DH reminded me that our kids have a ton of activities this week. I’m not letting that completely deter me, so we may have to move things around, but loosely here’s how I’m envisioning it:
Sun- DH made spaghetti (happened!) Mon: I have a roast with potatoes and carrots in the crockpot Tues: Both kids have activities, so it’ll have to be fast food Wed: Pulled pork in the crockpot after DD’s field hockey game Thurs: Turkey burgers Fri: Pizza

Tonight - fish and chips Tomorrow - pizza Wednesday - roasted chicken, mashed potatoes, corn Thursday - chicken lo mein (if anyone has a recipe they use for thiis, can you please share!) Friday through Sunday is always leftovers
