H is out of town most of the week, which makes it way easier for us.
I'm trying to work on creating a dinner queue and having the kids pick one meal a piece (a la Lazy Genius), so starting the list has been my goal today. Problem is that DD can no longer have dairy (it's been about a month) and is really making meals more difficult to plan as that has always been a go to for us.
All this to say that I don't quite know what we're having. DS wants chicken piccata, I'm trying to make a version of the Costco Madras Lentils, and will figure out the rest from there.
I think I managed to perfect a chicken burger recipe last night, so I need to make sure I write it down. We have enough leftovers for one meal this week.
Mondays have become routine for us. Roasted salmon, Baked sweet potatoes, and a vegetable (broccoli salad tonight and maybe some leftover pintos). I really like not having to think about what I'm going to cook on Mondays.
But the rest of the week is up in the air. After my outburst last week about constantly playing jenga tetris in my fridge, I decided not to buy food for an entire week. I have enough stuff to get through Wednesday, and then I'll need to (at the very least) go buy more fruit.
Tofu will feature at some point this week. And then I'll be pulling from the freezer or grabbing a few more things when I get out for more fruit. There's definitely more breathing room in the fridge now, so I'm hoping I can get to a point where I have room to meal prep breakfast/lunches for myself. Because today I had 'both' cheesy Ramen and leftover takeout and I feel so gross 🤢
