Tonight - steak, peppers and onions and pilaf Monday - buffalo chicken stuffed peppers and rice Tuesday- alfredo chicken pasta dump Wednesday- green enchilada soup and cornbread Thursday- meat lasagna Friday- teriyaki ground chicken rice and broccoli Saturday- pork tenderloin with carrots and mashed Sunday- beer beef noodles and salad
Lunches- chicken salad with mini pita, cheese stick, cucumbers and watermelon
Sun: Tahcheen (Persian - rice layered with chicken cooked w onions/yogurt-egg saffron mixture), all baked in a big pot then flipped over. It’s good, trust me.
Mon: spaghetti w Caesar salad
Tue: I got nothin’ (DH might be OOT) Wed I got nothin’ Thu: I got nothin’
Fri: my parents are coming for the weekend, and they’re picking up homemade cabbage rolls and perogies from the Ukrainian church on their way here, so my mouth is obviously already watering for that.
ETA: tonight's uncooked casserole fell upside down in the hot oven as I was putting it in to cook. As it's almost 6pm and the oven/stove are unusable due to the hot messy oven, it's taco bell tonight.

Do you have a recipe for the buffalo chicken stuffed peppers? I often buy a batch of stuffed peppers from our local grocery store to eat one a day for lunch for myself (no one else in my family likes them), but I'd like to cut back on red meat and that sounds interesting.
All I have so far is that we're doing chicken Parm tomorrow night. Tomorrow is grocery store day, so I'll see what else looks appealing when I'm there.
Lunches in no particular order: Good dairy cheese from a local farm stand + good crackers English muffins w/cheese Veggie burgers PBJ
Dinner: Sunday: Burrito (No job=kid's tofu burrito. You still get the same size bag of chips + a kid's drink + cookie for $7) Monday: Veggie burgers, side, whatever canned veggie looks good Tuesday: Soup+grilled cheese Wed.: Veggie burgers, not sure, vegetable Thursday: Maybe out with a friend? Friday/Sat.: Something at home
Idk. I have too much food in the cupboard and freezer. I need to inventory it and poke away at using it up. It’s getting cooler here, so maybe soups, sheet pan meals, and crockpot options.
My M & W breakfast - Greek yogurt with half scoop protein powder and a mix of various seeds, nuts, etc.
Dinners - not very organised as my H is going to a variety of events Sunday:We had pan seared sea bass fillets with a citrus pesto, a mix of tomato, roast eggplant and various other things, and smooshed potatoes Monday: chickpea curry and rice Tuesday: tofu chicken dish from the vegan cookbook I just got plus veg Wed: probably take out Thur: leftovers Fri: go out for dinner date with H

I don't typically eat breakfast, I'm just not a morning eater. If I do get hungry though it's usually just something simple like oatmeal. I do have a protein coffee in the morning that gets me 30g of protein right from the get-go. Lunches are usually leftovers, lunchmeat sandwiches, or salads.

Sun: out for Greek after DS's soccer game Mon: roasted salmon, rice, green beans, w/ some lemon-galic yogurt sauce I need to use up Tues: TJ's hatch chile mac n cheese, chicken nuggets, broccoli Wed: slow cooker beef stew, maybe peasant bread if I get a chance during the day Thurs: picking up whatever quick takeout the kids want, I have a late in-person meeting and the cleaners should be coming so no cooking Fri/Sat: no idea yet
Beyond the usual sandwiches/homemade lunchables, we had half a package of tortellini leftover from a dinner last week that I cooked and mixed with the last of the fresh pesto we bought last weekend that's lunch for DD and I for a couple of days, and I'll use the little bit of Greek leftovers for a salad one day. DD baked some muffins on Saturday that'll be breakfast for a few days.
She listed parm cheese in one photo but not in the directions at all so I added parm to the meatballs, chopped capers and breadcrumbs.
I served with orzo and mixed in sautéed kale. I liked it enough that I ate it all, it’s just not my favorite flavor. But my husband loves picatta so I make it mostly for him. I declared I liked this better than traditional.

this is more labor intensive than my traditional picatta, to be honest.
H is OOT starting Wednesday so it's just DS and I.

Lunches will be leftovers. Breakfast is always yogurt with granola and fruit or pineapple/cottage cheese and a banana for me. DS chose blueberry muffins this week instead of his usual cereal.

I eat pretty much the same thing for breakfast and lunch every day: Raisin Bran Crunch (dry!) and a glass of milk for breakfast and scrambled eggs and wheat toast for lunch.

I rushed in to Costco last night and grabbed an alfredo chicken bake in the pre-made fridge. Surprisingly, the kids ate it! we have enough for leftovers tonight, at least.
Tuesday: maybe Hot Dogs? DD was mad I wouldn't buy her a Costco hot dog. Oldest DS doesn't like them, so he can finish the alfredo chicken Wednesday: I think we'll do picadillo in the crock pot over rice Thursday: leftovers Fri: leave for vacation

DD is taking all the leftovers for lunches which is good for her but leaves me eating a can of soup or a rice bowl. DD's high protein breakfasts this week are breakfast burritos, Kodiak waffles, yogurt and granola.
