H was out of town Sat-Sun, so I spent some time organizing the pantry and cleaning out the fridge and freezer. Then I made a meal plan and did a good grocery run and Aldi pickup.
S: We had roasted pork loin with a shallot cider pan sauce, roasted butternut squash and Brussels sprouts and stuffing (just stovetop, which was so good, LOL) M: chicken tenders, breaded and pan fried with assorted dipping sauces and a big salad T: I'm meeting a girlfriend for dinner, so the boys are on their own. They'll either eat leftovers or get takeout W: lasagna soup with homemade garlic knots Th: fried rice with leftover pork roast, broccoli F: Detroit style pizza with chicken wings in the air fryer, raw veggies and dip S: TBD. Either out or takeout probably

Saturday - BBQ pork tenderloin with roasted broccoli and mashed Sunday - mac and cheese with salad Monday - buffalo chicken and potatoes with broccoli Tuesday - beef and veggie stir fry with rice Wednesday - grilled chicken with spinach and artichoke quinoa Thursday - ravioli and salad Friday - pork verde enchiladas Saturday - something easy because we have a 4 hour round trip ride for a 2:30 hockey game.
Last night: DH smoked a pork tenderloin, roasted potatoes and homemade applesauce Tonight: Tuscan chicken soup Tuesday: tuna melts and veggies Wednesday: sheet pan chicken fajitas Thursday: everyone will be scattered about since both boys have football team dinners Friday- Monday: I am going to VA for my aunt’s funeral so DH and the boys will be on their own
Saturday: ground beef rice and broccoli skillet (kind of made it up, not my favorite) Sunday: grilled sausage and asparagus, oven roasted potatoes Monday: taco bowls Tuesday: chicken noodle soup Wednesday: homemade version of a local restaurant’s pasta veggie wraps

Thu: Jalapeno popper chicken casserole (probably; and this also makes an extra to freeze for later)
Depending on our potato supply, I might be able to sneak in a pork roast and mashed potatoes (with a side of butternut squash in browned butter), and a shepherd's pie before having to go to the grocery store again. But the hamburger soup takes a lot of potatoes, and I only bought 5lbs last time because of Safeway "just for U" coupon.

The chili is going to be lunch for everyone at least one day this week too. I also roasted a random bag of brussels that I forgot about and a cute little honeynut squash, will use those in salads or something for lunches too.

Also, I just realized that in the years I've been making it, I've never added the 1/2 cup milk. LOL!
I use one small can of diced jalapenos (because lazy) instead of the fresh, and I divide this recipe up into 2 8x8 pans, and freeze the second one, which is perfect for the 2 of us. Top it with a sprinkling of panko and some dried jalapenos (from Trader Joe's in the can) for an extra bit of crunch (I do this instead of topping with fresh jalapenos and green onion).
