Looking for some new ideas. I'm feeling stumped and drawing a blank. I googled and it's a lot of soups and pot roast! Or creamy/cheesy stuff.

My oldest is off at college but he comes home on weekends. While I do work Sunday mornings I'm trying to do a nice sit down Sunday dinner since he eats the dining hall all week.
No one (except me) likes soups or stews so those are out. Also spicy foods and fish are no go.
I was doing a nice grilled chicken, pork or steak and making amazing salads and fresh veggies but with cooler days, I'm transitioning indoors.
I've done spaghetti and meatballs Garlic Rosemary Chicken with Cranberries over quinoa and veggies.
I also don't have a huge window for cooking. I sometimes have to grocery shop for the week after work and am not getting home until after 4. Then we drive him back after dinner. Plus I work Mondays in the office so I'm looking for easy.
Chilli (I add roasted butternut squash in mine) with cornbread or biscuits or whatever
Baked pasta (I use penne and jarred sauce, you can add Italian sausage if you want) with a bagged salad and garlic bread. I use cheese but you could leave it off part for you or use dairy-free cheese
Crockpot tacos
Rotisserie chicken with bag of salad and Hawaiian rolls
Tamale pie (basically shredded beef or chicken, or ground beef seasoned for tacos, with diced peppers and onions mixed in, then put cornbread batter on top and bake)

Pork tenderloins - cook with cranberries, dried apricots, a little brown sugar, a splash each of cider vinegar, and apple or orange juice. It cooks fast. Serve with rice or egg noodles and a vegetable. Edit - I forgot that I also put in about 1-2 teaspoons of mustard powder.
Mexican lasagna- layers of corn tortillas, taco meat, cheese and taco sauce
I’ve used this sauce when I’m crunched for time or not home most of the day to babysit a simmering pot of sauce. We do pasta with homemade sauce and meatballs or sausages with garlic or fresh Italian bread a lot of Sundays.
I also will do a rotisserie chicken and pair it with a steamed veg and mashed potatoes (when crunched for time I’ll get the ore ida frozen steam potatoes and then mash those like I would if I boiled the potatoes myself.
I just made a beef tips crockpot meal that I served with salad and egg noodles that was delicious and a hit with very little prep.
Other quick meals my family likes are spicy ramen, tacos, homemade pizzas, chili (crockpot)

Ohhh, thanks. I actually make a shortcut chicken parm I forgot about. I just sprinkle boneless breasts with breadcrumbs and a little parm and bake. thanks for the reminder.

My mom had like 3-4 meals for Sunday dinner. Stick with what you know and let them appreciate that. Make it tradition. Life is hard enough, why drive yourself crazy trying to keep a variety going?
Grocery store has frozen turkey breast on sale this week. I am cooking one in the instant pot (butcher recommended), should take about an hour and I can put the veggies in with it if I want. You can stick it under the broiler when done if you want crispy skin. I am serving mine with mashed pot, mashed cauliflower and broccoli.
Meatloaf - I am making "muffins" out of them as they freeze super well and can be microwaved to reheat. I also have seen recipes to make it in the crockpot.
My favorite - sheet pan chicken thighs with sweet potatoes, red onion, and a green (brocolli, brussel sprouts, etc). You can make a pan gravy by searing the chicken first if you want but I find the chicken doesn't need it.
We have Sunday Salmon: green beans, oven-baked salmon with lemon slices or seasoned salt on it. That's it. The catch is you have to actually have thawed salmon ready to bake, but I grocery shop on the weekends so it works out.

My first thought was chicken pot pie since that’s just what we had for dinner last night but I used two sticks of butter just in my crust so that probably won’t work for you LOL Or Lasagna that was going to be my second suggestion.
Generally, what I would make on the weekend would be things that are the most time-consuming when it comes to labor or have a longer cooking time. Other than the above, I do make a lot of soups and stews so again that wouldn’t help you. What about roasted chicken you could serve that with a veggie and something potato. Other ideas - spaghetti and meatballs, meatloaf, and mashed potatoes, chicken fajitas, orange, chicken, beef, stirfry, eggplant Parmesan without the cheese.
You can do a Shepherd’s Pie a day or two before and bake it on Sunday. Mash the potatoes without dairy and you are all set.
It’s also not a big deal in the morning on the day you want to eat it. It’s really just one pan for the meat and another to boil or steam the potatoes. It comes together without much fuss (this may be because I’ve done it a bigillion times). Anyway, great for a crowd and even better leftovers.

+1 for shepherd's pie. Satisfying comfort food, easy to make ahead and stick it in the fridge until you're ready to bake it. I am GFDF and I use Earth Balance sticks for butter, but my best tip is to use a little chicken broth instead of milk. It makes mashed potatoes taste rich/more savory and gets the consistency smoother without dairy, and it doesn't really come off as "chicken-y", taste-wise, in small amounts.
I also do make-ahead chicken enchiladas. I fill mine before I put the shredded cheese into the filling, and then I don't put cheese on top of them. It's easy to tell which are mine.
I like doing pot roast in the slow cooker and then I'll make mashed potatoes and a vegetable. I also like doing a whole roast chicken. Those are super easy but take about an hour to cook. Sometimes I do mashed potatoes with that or potatoes and root vegetables in the oven. My kids are very basic in their tastes. I save our adventurous recipes for when they are away at school.

We have done a boneless turkey breast in the crockpot and then use store bought mashed potatoes, gravy and corn and I will make stuffing the night before. We have also done slow cooker boneless short ribs in the crock pot and served them roasted parsnips and carrots and again simply potatoes mashed. I have a slow cooker beef ragu with pasta on the list to try when the weather gets colder.
This. Her vegetable lo mein is a favorite. I add rotisserie chicken to it. Love the pot roast on that site. I don’t think we haven’t liked anything from the site.
I really liked this recipe for sheet pan pork tenderloin with potatoes and carrots, it's easy and so good and definitely a more fall dinner. I don't even like carrots much but I like them in this recipe!
