I made a red chicken posole today. It's so labor intensive, but it turned out really good. And it's healthy, cheap, and makes so many meals.
This is David's birthday week. He turns SIXTEEN on Wednesday (omg). So, we have all kinds of plans for him, including going out a couple nights, otherwise will eat leftover posole. I've also been craving Pho, so if we need to pick up a meal that's going to be it!
We co-hosted by bff's 40th birthday yesterday. Almost half the guest list cancelled between Friday/Saturday because of illness so we ended up with a lot of leftover food. We froze as much as possible, but this week is all about the leftovers. Pulled pork and sliced beef sandwiches, bourbon peach baked beans, roasted baby potatoes, coleslaw, cucumber tomato salad. And cheesecake. I'm fine making every meal about the cheesecake.

I just gained five pounds reading this. I'm totally inviting myself over for aaaaaallll the things. OMG, those baked beans sound delicious. And pulled pork is my kryptonite. I'm picturing the cucumber tomato salad lightly drizzled in a balsamic glaze and with feta cheese; please don't let me know if I'm wrong. I now know what I'm going to fix myself in the next couple days.

We were on vacation last week so I spent way too much appeasing every craving that popped up 😅 We agreed to limit takeout to once a week at cheaper places for the rest of the month to compensate.
This week is weird because I went back to work today but H doesn't go back until tomorrow. And my company gives election day as a holiday so I'm off tomorrow... so alll my anxiety is going into cooking.

I mainly stuck to this recipe that uses pork. While it's delicious, it is so fatty, even after skimming it. I quadrupled the chilis because they add so much flavor and there's no way this recipes calls for enough for my taste (but I'm also very aggressive with seasoning and spice in general). You can use any dried chilies you want, or even a mix. I mainly use ancho.
I used this recipe for yesterday's- I added more chilis and I used a mix of breast and thighs. I boiled the chicken per the instructions, but you can make it any way you want, as long as it's shredded, if you want to save time. Don't skimp on the toppings! That makes the whole dish.

twice baked potatoes, potato skins, stuffed potatoes with chili, potato pancakes, hash browns (can freeze for later), wedge fries, baked potato soup, roasted potatoes (and put them in breakfast burritos as well), breakfast scramble with roasted potatoes.
I don't know what to call these - guess they are twice baked mashed potatoes, but mash potatoes, use an ice cream scoop to put on a baking tray - freeze. then heat it in the oven at a later date.
