Sat: beef and green bean tagine, couscous Sun: making chicken curry, chana masala, and rice for youth group dinner, will eat with them Mon: pork tenderloin, roasted potatoes, broccoli Tues: chicken sausage pasta, salad Wed: leftovers? throw something together from the freezer/pantry? Thurs-Sat: HS fall play, boosters provide dinner so at least DD and I will eat there, DH and DS sometimes come help with concessions before shows so they might eat there too or take themselves out

Saturday - ds and I had tomato soup and grilled cheese Sunday - no idea Monday - we have all the things tomorrow night in school town so either gas station or lunchables Tuesday - ds has a basketball game so gas station or concessions Wednesday - this is our only night at home this week... pot roast, veggies, roasted potatoes Thursday - parent meeting for winter athletics so gas station again or out depending on what time we get done Friday - ds will be at a 4H dinner (pot luck) and H and I will be at a fire fighter appreciation dinner (prime rib) Saturday and Sunday will be figured out later
Sat - Teriyaki takeout (fried rice and pot stickers for me, teriyaki chicken and rice for H)
Sun - a medley of leftovers - tacos and refried beans; Harissa orange chicken, couscous, and smashed cucumber salad w/ fried lemon; fried rice and pot stickers
I have everything for the following meals, but my appetite has been incredibly low since the election, so I'll make them depending on the leftovers situation (which right now is really high):
- monte cristo sliders - cinnastack pancakes and sausage patties - Italian sausage and potato soup - grilled cheese and tomato soup - creamy chicken pasta
I probably need to start with the Italian sausage soup, because I bet my spinach is getting iffy.

Chicken with a shredded cheese, fried onion crust. Basically, grab a thing of fried onions (the same kind as geeen bean casserole) and dump it in a bag. Add a little flour (1/4 cup?), some shredded cheese. Cut chicken into decent sized pieces, not super thick, and you can do strips or chunks. Dip the chicken in an egg wash, then dredge in the onion cheese mixture, coating evenly, then put on a baking sheet lined with parchment paper. Bake at 425 for 25-35 mins. We’ll have that with salad or garlic Parmesan green beans.

H did bbq ribs, coleslaw, and twice baked potatoes today for a friend.
Tomorrow - Mediterranean lamb stew ( themom100.com/recipe/mediterranean-braised-lamb-shoulder-chops/ ) This recipe, but we add a bit more veg and broth to make it more like stew. Serve it over rice or with naan. Leftovers are fantastic and it makes a lot of servings for us.
H isn't home for dinner the rest of the week so DS and I will have a rotation of grilled cheese/soup and breakfast for dinner.
Sun - H made chili and there are LOTS of leftovers for lunches Mon - Shrimp - either breaded or scampi Tues - Cobb Salad from meal service Wed - Sloppy Joes Thurs - smashed potatoes topped with turkey, stuffing and gravy from meal service Fri - Cheesesteaks I think
We started using a local meal service and it's been a nice time saver and has allowed us to try different things. It's set up where we submit orders on Friday and pick up on Tuesday and the food is already put together and prepared we just have to heat if needed! The past few weeks have been busy with dance, cheer and volleyball so it was nice to not have to worry about a few meals and saved us from eating out or grabbing junk!

Last night - scallops, baked potatoes and green beans Tonight - meatball and ricotta pizza with salad Tuesday - one pot cheesy jalepeno chicken, corn and rice Wednesday - shaved steak with broccoli stir fry and rice Thursday copycat KFC chicken, mashed and corn bowls Friday - broccoli and cheese soup with biscuits Saturday - DS's team has their first round of playoffs so we're going out after with a teammate's family.

Joining in this week as I always get inspiration from reading everyone else's. It's just me and the hubby so it's easy items this week and allowing for lunches the next day: Tonight- Southwest Chicken & Rice Skillet Tomorrow- Chili dogs Wednesday- A new food truck that is coming to town. Thursday- Chuck roast in instant pot with mashed potatoes & brown gravy. Probably add in some roasted broccoli or roasted carrots. Friday- Probably shrimp and orzo. Saturday- Our 22nd anniversary so I hope it's out to eat somewhere.
