I'm taking part in a meal train for a good friend of mine who has advanced colon cancer. It's my turn to take a meal on Monday and I decided on minestrone soup. Does anyone have an awesome recipe? Also how much would you plan on making - its for 2 adults and 2 teenagers. I planned on the soup with a loaf of french bread.

I use a friend's recipe - super easy and we love it.
I don't have it with me and no link - but it's basically.
Brown 1/2 lb sweet italian sausage add in chopped onion, 3-4 carrots, 3-4 celery stalks (all chopped) once sauteed - then add herbs: thyme, oregano, S&P 1 can crushed/diced tomato with juice 1 can white beans with all liquid 3 cups stock - we use chicken stock additional chopped veggies as you like: zucchini, kale, spinach, squash, etc... simmer 30-60 min (longer the better) add ditalini pasta
if I was making it for someone else I may send the cooked pasta on the side to put in and heat up as otherwise the noodles take over. I would take all of what it makes and some ziploc storage containers to freeze leftovers or store for the next day lunch/dinner.
One is a lot of chopping and prepping and although I recommend it, I have to really want to so the chopping and prepping.
The second is equally fantastic and I do it all the time. It’s my go-to for school pot lucks and family get-together. It recommends pesto at the end and that might elevate it to star status. Plus the butternut squash. It make a big amount & I don’t mix in pasta until serving because it sucks up too much soup. And it’s nice to be GF, even by accident. Use extra broth, too. I serve the pasta and soup side by side.

I didn’t know BC’s was so popular!! But it really is delicious and now I want to make some but maybe half the recipe because it makes a shit ton and it’s just for me.
