I've been lurking for a while here, but can I just say that you guys are all amazing for making all these meals during the week. I have no idea how many of you work or are stay at homes, but WOW - either way, I'm impressed. I can never find the time to cook that many times each week, and such elaborate meals as what you all are posting. But then again, I work crazy hours and live by myself
Grilled Cheese with Caramelized Onions and cups of homemade soup. Mushroom Lasagna with green salad and homemade ciabatta Firecracker Shrimp with Delicata Squash roasted with apples and onions Indian curried potatoes with peas and garlic naan Fire Roasted Tomatoes with White Beans and Cippollini onions and homemade French Bread. Dinner out at a party with friends and a night of leftovers.

Sat: breakfast for dinner - omelettes, cottage potatoes, peas and a pineapple upside down cake. Sun: meatloaf and butter carrots Mon: Steak, cornbread madeleines, watercress, orange and avocado salad Tues: carnitas sopes and black beans Wed: chili Thurs: stuffed peppers Fri: shrimp, grits, and southern greens
Sunday - Chili Monday - Tofu stir-fry over whole wheat cous cous Tuesday - Black bean burrito bowl Wednesday - Meatless "meatballs" in tomato sauce, side salad Thursday - White bean ragout over parmesan toast, roasted veggies Friday - out to dinner for a friend's bday

tonight - chicken enchiladas, fruit Sat - out for lunch, not sure for dinner Sun - bacon pizza recipe for lunch after church; turkey breast and stuffing for dinner
Mon and Tues, dd and i will find on our own since dh is gone wed - pizza take out with dh, dd, me and my sister thurs - pesto ranch chicken breasts

I work FT M-F and I actually usually hate coming home and having to cook. But, I save my more elaborate meals for the weekends when I have more time and am very fortunate to have a husband that helps me with the prep and cleanup. I also spend a decent chunk of time each week meal planning- and griping while I do it. Lol. But if I didn't have everything planned, we'd eat convenience food every night, so it is worth it in the end.
And don't feel bad, it is hard when you work crazy hours and don't have someone to help out.

About a third of my meals is something defrosted and added to. I keep the bread doughs, the caramelized onions, soups, roasted red peppers and a handful of complete meals in the freezer. I will make a double batch of some dinners and freeze in double portions (there are two of us) to add variety and take care of those nights when I know I will be extra busy. This way we get home-cooked food without the time investment that night.
Those are good tips. I should try freezing things more, or at least now that the weather is cooling off, maybe trying to put together crockpot meals into bags ahead of time so I can just throw and go. Kudos to all of you for the meal planning. It is time intensive, for sure, but totally worth it!
