It depends - if I'm using leftover chicken, it's already cooked. If I have something going on in the oven, I'll throw the chicken in too and bake/roast it. If I'm making chicken just for chicken salad, I'll poach it. I never boil chicken.
For convience, I just get a package of boneless, skinless, chicken breasts and bake at 530 for 45 minutes with a little bit of extra virgin olive oil, salt, and pepper. When it is done, and still hot, if you have a stand mixer you can throw the chicken breast and juices from the pan in and turn it on and you chicken will be shredded in one minute!

I can shred chicken with my mixer??? How did I not know this? I have a kitchen aid....which attachment do you use?
