I made couscous with diced dried apricots a couple of months ago - I wasn't expecting to like it, but I loved it.

For falls I like boiling it in a combo of water and apple juice, then adding diced dried fruits and nuts, and a little cinnamon. It's a nice sweet twist on something normally savory, but it works as a side dish for a main meal as well.

I make couscous with diced apricots, raisins, cherries and sliced almonds mixed in. I top with goat cheese and a protein.
