I've been using Calphalon's anodized cookware and recently noticed that the surface is peeling on two of my pans. I'll need to replace them.
While looking into replacements, I started wondering if this cooking material is safe. There are obviously a lot of concerns about using aluminum cookware, but I had read that the process that anodized aluminum cookware goes through, eliminates any concern unless the surface peels. However, there are a number of articles that still recommend avoiding this material.
So what's the verdict on this?
If I should avoid it, can you recommend any other nonstick cookware that is safe?
Have you tried cast iron? It gets better with age instead of wearing out and can go from stovetop to oven. It's also dirt cheap. The only downside is the weight, but that's also it's upside because it's super even cooking. I use SS for all my sauce pots.
I avoid non-stick surfaces mostly because I'm cheap. But I also don't particularly trust them.
