You're casting a pretty wide net, but I'll bite. We went to San Juan, Puerto Rico & Vieques in November a few years ago and the weather was perfect. We've also been to PR a few other times. Based on those various trips, I would recommend: - a visit to Old San Juan and some hanging out on the beaches nearby (Isla Verde or Condado) - a day or two spent exploring El Yunque (rainforest) -the bio-luminescent bay at night (I think it's in Fajardo, but I actually can't remember the town right now) -a drive through the central cordillera (mountain range) to have some amazing suckling pig at any of the "lechonerias" that line the road - a drive to Mayaguez just to have fresh catch of the day (otherwise, I have no other memories of Mayaguez proper) - a stop in Ponce, because it's just a lovely little city. The art museum there is supposed to be very nice, but I've never actually gotten to go inside. - several days exploring the various small beaches of Vieques (you can either take a ferry from Fajardo or a small plane from San Juan).
You can probably go fishing just about anywhere in Puerto Rico, but I'm sure you can find more detailed reco's on this aspect online or in any guide book. I think you can also probably do all kinds of water sports and diving, but again, do more research.
All around, I really like PR because DH and I have each found a lot to do there when I'm more of a beach person and he's more of a hike & explore the outdoors person.

Southern Chile has amazing scenery and lots of outdoorsy stuff to do. Look into Pucón in particular - hiking (national parks and also up a volcano), rafting, hot springs, I would imagine there's fishing. Very touristy in terms of having infrastructure but not overrun and horrible. It's safe and will be late spring/early summer.
You could do city stuff either before or after with a couple of days in Santiago.
