Some friends and I and my husband are renting a cabin next weekend, and with 1 vegetarian, 1 semi-vegetarian, and 1 vegan we're just going to be doing vegan food. We will have dinner Friday night and Saturday night, and breakfast Saturday morning and Sunday morning. For lunch on Saturday, we'll be at an event and on our own.
Stuffed tomatoes w/ italian bread, red onion, olive oil and balsamic, with a side of couscous/orzo (something like that).
Breakfast:
Coffee (vegan coffee creamer) cereal or granola with non-dairy milk (almond or coconut) bananas
Snacks:
chips with salsa and guacamole hummus and baby carrots
I'm trying to make it not too expensive, plus not too difficult. I'll probably prep a few things at home and package them and bring them in the cooler. We'll have a full kitchen but I don't want to have to haul a ton of stuff up there.
If anyone has a good recipe for some kind of carb side dish (like couscous or orzo) I can use with the stuffed tomatoes, please let me know.
The pasta e fagioli and stuffed tomatoes I've made before, so no worries with those recipes.
