We're having some of DH's family in town in 2 weeks. Luckily they are staying at a nearby hotel.
The problem is one of them used to be a "chef". He started in some restaurants in Chicago and then sort of retired to being a chef at an assisted living facility. The guy can cook. I know he'll probably be happy someone else is doing the cooking but I still want to give a good impression since I've never cooked for him.
I don't want to eat out at night every day. DH and I were talking last night and he's really no help. I need some fool proof meals that I can make. So far I have homemade spaghetti, chicken chili and a rolled beef tenderloin (stuffed with cheese, prosciutto, spices). What else are your fool proof meals if you were trying to "impress" someone? I've cooked for my FIL before but not for the "chef" in the family.

I try to go for stuff they don't usually make. When my family visits they request Chicken Tikka Masala, Mongolian Beef, Beer can chicken with french mashed potatoes and hot and sour soup.
