need recipe ideas for ground beef

Had an issue with my other freeze, need to cook 4 pounds of ground beef tonight. DH won't eat tacos, so it can't be mexican related, thinking burgers for some, maybe a stir fry. Any other ideas?

Wrap meat and cheese inside storebought biscuit dough to make burger bites. Or put each biscuit in a muffin tin cup and layer the beef and cheese inside to make a burger cup.

I would make part of it into a chili and meatballs from the rest. You can freeze cooked meatballs. They'll make a quick dinner later.

What's the deal with your freezer? Can you actually use it now? Or did you defrost 4 lbs. of meat? You shouldn't refreeze defrosted meat.

If you cook defrosted meat, its cooked, so you can freeze it again without issues.

Cheesy meatloaf would use 1.5lb. It freezes well, just cook, cool then portion & freeze

Cheesy Meatloaf
1.5 lb ground beef
1 cup shredded cheddar cheese
24 finely smashed soda crackers
2 eggs
1 Tbsp A-1
1 small chopped onion (optional)

Topping
2 tsp A-1
2 tsp yellow mustard
1/2 cup ketchup
1/2 cup brown sugar

Mix meatloaf ingredients well & press evenly into an 8x8 baking dish. Mix topping & spread evenly over meatloaf. Bake for 1 hour at 350°.

What about kufta?

I don't have the recipe I use handy, but it's similar to this (except I use beef instead of lamb and omit cumin and cayenne pepper because I don't care for either of those spices):

I usually serve it with pita bread, lettuce, tomatoes, pickles and tzatziki.

I'd make a ton of meatballs to keep in the freezer. I love having frozen meatballs for easy dinners!
