I usually cut it into strips about the size of my index finger, and saute it in olive oil until lightly browned. Such a small piece of meat has always been cooked through by that point. I would keep it 2-3 days in the fridge. Chicken was one of DS's first solid foods, he loves it!
I seasoned with garlic & onion powder and cooked it like I usually do: - heat olive oil in a pan over medium heat - when oil is hot cook chicken for 2 min on each side - bake for 18-20 min in a 350 degree oven - rest chicken for 5 min then chop

We just served her the same grilled or oven baked chicken that we would eat, seasonings and all. We normally served it with a veggie like broccoli (we did baby-led weaning) which helped move things through.

If you want to start with something super easy to chew, use canned chicken. Sounds awful, I know, but it's so soft that I didn't worry about her choking. And it's not that bad -- I'll make chicken salad or quesadillas with it for me and DH.

I guess I'm bad because I boiled chicken for my DD; bad taste or not, she still ate it (but I like boiled chicken, so maybe that convinced her?). We give her sautéed or baked chicken now. I buy huge packs of organic chicken from Costco, cut it into small pieces, cook up a big batch and freeze it after a day. She LOVES chicken.
Roast or grill it. I just give him what we are eating. Do you have a meat thermometer? If not, I would highly recommend so you won't be nervous about cooking it enough.
I started with puree poached chicken and I mixed it with apple to avoid dryness Now we make chicken nuggets. Bread crumbs, quick fry and then bake. She loves holding them. The chicken is moist and they are easy to freeze.
Also you could try turkey meatballs too...my kids loved those at 9 months. I just crumble them up when I give them to them. Ground turkey-buy the one higher in fat, 1/3 cup bradcrumbs, egg, italian seasoning. Bake at 375 for 30 min.

She gets whatever chicken we are eating. One of her favorites is chicken and veggies in the slow cooker. Typically she will eat it in any form though. She usually loves chicken.
We either gave them whatever chicken we were eating or I bought all-natural rotisserie chickens from the Whole Foods deli and pulled meat off that for them. The latter tends to be very tender and juicy and requires no effort on your part .
