Well, L has decided that she is only going to eat soup for dinner these days (in an attempt to lose weight and to be able to exercise in the evening) which gives me no incentive to figure out any type of adult dinner. Not to mention I didn't go to the grocery store this weekend and L has a cold.
We only have three meals planned for this week: Monday - Black bean salsa soup with chicken Some other day - Tomato soup and grilled cheese Another day - Honey Lentils
The other days we'll have leftovers or takeout. The plan this week is to take it easy on dinner prep so we can work around the house.
Okay, getting back on the wagon after the FAIL of my ruined chicken soup two weeks ago, and a rough week last week.
Tonight: Chicken with squash and asparagus - though we have a bit of DW's leftover chili, so that's an option too...though maybe we'll save it for tomorrow's lunch Tuesday: Probably chicken again, though if I have time, I will use the carcass to make soup Wednesday: Make the chicken soup if I didn't on Tues, have that for dinner Thursday: more leftovers (Ah, I love roasting a whole chicken! ) Friday: simple ground turkey or beef and veggie casserole
Basically we're going through DW's chili and my roasted chicken/chicken soup until it's gone I did pick up a box of mac & cheese for Hen when he inevitably tires of the chicken. Also, I have some tofu in the fridge that I bought last week and didn't get to - that could be used for an easy dinner if we run out of food or whatever.
ALSO! This week I am hoping to have time to whip up one or two make-ahead & freeze breakfasts. I found on Pinterest some pancake/sausage muffins and bacon wrapped egg cups that I'm hoping to find the time to make.
Okay, so sorry for responding with a novella, haha. But guys, I'm off to a great start this week, and it feels really good
My soup is already started!!! I am making broth from the carcass right now, so that tomorrow i'll be ready to throw everything else in. Ahhh I love being AHEAD on Monday night rather than behind!
