I went to the farmer's market this morning and picked up eggplant, arugula, tomatoes, and kale. Plus some cinnamon bread for French toast.
So, I'll make eggplant parm (good for a couple meals), some sort of arugula prosciutto (leftover from last night's picnic) pizza, and, um, that's as far as I've gotten. The kale will likely get sauteed as a side, but I'm not sure to what. Or maybe it will be kale chips.
