Monday - I might be going to dinner with a friend and leaving L on her own. Tuesday - L will be out. Leftover salsa chicken (though because I didn't follow the recipe, it is more like tortilla soup - but still yummy.) It is too spicy for the kids so....something kid friendly for the kids. Wednesday - probably take out since the kids have a late soccer practice. Thursday - L is going to be out again, I think. Probably pasta for the kids and leftover salsa chicken soup for me. Friday - L will be home (holla!) and we'll probably go to our favorite Mexican place for dinner.
OMG I have no idea! I am going to figure it out right now, in real time. LOL We are trying to stretch what we have left in the house to avoid another full grocery shopping before the next payday.
I have 1.5lbs of chicken breast and 2lbs of boneless, skinless thighs. Oh! And I still have that tofu that I never opened! Also, I have bacon and eggs
Alright, so I have the stuff to make honey orange tofu in the crock pot. Think I'll do that today. And I can do bacon wrapped egg cups which can be for breakfast or a snack.
I can buy some beans and other fixings and do crockpot salsa chicken with the thighs, which we use to make quesadillas (or maybe steal CT's idea and make them into taquitos!).
And then I can use the breasts to a do a simple chicken/rice/veggie casserole for the end of the week.

2brides - you can always scoop out the salsa chicken with a slotted spoon to get rid of excess juice. We have done that before when we forgot to drain the can of beans we added, haha! Then we use it as quesadilla filling

Monday: Working late so DW and the kids are fending for themselves. Tuesday: Chicken sausage w/ pasta, peas, and a light cream sauce. Wednesday: sweet & sour chicken w/ brown rice Thursday: chicken taquitos OR open face chicken salad sandwiches (I do it like a tuna melt but w/ chicken salad) Friday: homemade hidden veggie meatballs w/ spaghetti
Monday: Mac and cheese with meatballs - no meatballs for me Tuesday: Fish sticks with tater tots or sweet potato fries and veggies - veggie sliders for me Wednesday: We will be out with friends and will grab something Thursday: Baked potatoes Friday: Spinach and chickpea patties with fruit and cottage cheese
see? this is the problem with me making a menu. Already it has changed. L is going to finish the writing she didn't get done and I am picking up the kids and taking them home. I think I will chop up some veggies and sautee them to put them in the salsa chicken soup for dinner tonight.

I ended up not making the beef stew until Thursday last week, and was gone all weekend (T&G ate with Nana both days) so we have enough left over for tonight and maybe tomorrow night too.
W - I think chicken in a peanut sauce over toasted quinoa. Th - Probably the leftover chicken since... F - we leave for Pittsburgh!
2brides - we long ago gave up on assigning days to meals. Instead, we usually just pick three meals for the week and cook whatever seems good on a day we happen to be home. It's a little easier without little one palates to satisfy, but it works for us. Weeks we buy items for five meals at home, we're just fooling ourselves.
