We're going camping in a few weeks and I'm looking for some tried and true recipes that we can make there. We'll probably do some kind of chili, but still need 2 - 3 days worth of food. We have a camp stove, a fire grate there and plenty of cookware. Would love any and all suggestions!
Honestly, our camping food doesn't differ that much from our regular food. For example we are having stroganoff this weekend. We simply make the sauce part ahead of time and keep it in a disposable tupperware. We've also done stir fry, spaghetti, etc. It doesn't have to just be your standard burgers and dogs (not that we don't eat those too).
We like hobo dinners (chicken and veggies cooked with butter and seasonings in foil packets over the fire). Since it does include chicken, we usually make them the first night. If you google, there are a million recipes online with better directions.
Do you have pudgie pie makers? We like pizzas made in those but with biscuit dough for the crusts rather than bread. (It takes two pieces of dough flattened out to make one pizza.)
On the day we leave for camping, I make and freeze chili and biscuits (freeze the biscuits on the cookie sheets and then put them in the plastic bag after they are frozen) and I also freeze layer cakes. I make the biscuits and ice the cake before we leave.
Once at the site, we simplify. Love things in foil packets. Hot dogs. Smores. There are lots of online recipes for Dutch ovens and I also have a grate that goes over the fire and a stove.
Keep in mind that state campgrounds or campgrounds with bear problems are going to insist you keep a clean camp site -- all coolers need to be locked in cars, no food or toiletries in the tent, etc. I'd avoid wearing food smelling clothing in the tent as well.

We usually cook veggies (like asparagus or red peppers or zucchini, or even fruit like pineapple) on skewers or in foil packets (definitely potatoes and onions in foil packets: you can also mix that with arugula and sherry vinaigrette afterward), and marinated chicken or steak or sausages in addition to burgers and hot dogs. I like to keep it simple with separate meat, veggie and starch (buns or potatoes), but not the kind of meals I make at home.

My favorite camping food is foil wrapped potatoes on the fire paired with boil-in-the-bag Indian food. A really tasty meal with almost zero clean up. So easy.
