I made the coconut frosting found here: iambaker.net/white-cake-coconut-frosting and put it on a chocolate cake and topped with toasted coconut. Pretty awesome.
There was a bit of frosting left over and since it's made with egg whites, DH decides to see if making meringues would work.

I just ate the most delicious coconut meringues! I'm assuming adding any flavor of extract would work as well. We baked on low for 4 hours since there was water in the recipe but they turned out fantastic!
