I used Granny Smiths and add about a half a cup of extra apples because the apple chunks are so good. In my second and third I also use Trader Joe's Caramel sauce rather than bothering with making my own caramel with the Wherther's and milk.
Definitely easy. The hardest part has been separating it from my springform bottom without scratching it (the caramel tends to soak through the crust and glue the cake to the bottom). Parchment paper helps a bit. This would be a perfect Turkey Day recipe; the cinnamon definitely gives it a holiday taste. Hope you enjoy it as much as we did
Oh, and I NEVER put my cakes directly in the water bath. My foil isn't as wide as what's called for in the recipe, and I've learned the hard way before that putting a cake in the water bath in just the springform is a great way to ruin a cake. I put a separate container of water in the oven on a different rack, and it works just fine to prevent cracking. I do take the cake out at the end, loosen the springform sides and then put it back in the oven as it cools with the door proped open. That slow cooling seems to help prevent cracking as well.

That looks freakin delicious! I might have to make that at some point. Though I have a feeling I would end up eating the entire thing since DH doesn't like cheesecake.
