I've made granola for a very long time with great success. I tried making granola bars for the first time this weekend, and they are very soft and don't stick together well. (They would be fine for an adult, but I made them for my 15month old son, and his fists just disintegrate them).
I followed 2 recipes, so not sure what I can add to get them a bit harder (not too crunchy though for my son with only 8 teeth). The recipes called for applesauce mixed with honey as the 'glue' to mix with the granola. I used homemade applesauce (baked apples with cinnamon and put in food processor), mixed with honey, and added granola. I added flax seed, unsweetened coconut, and fruit sweetened cranberries.
I'm thinking more honey could do the trick?? They are already pretty sweet, so I'm wondering if more honey would make them too sweet?
The proportions were - 2.5 cups granola 1 cup 'applesauce' 1/3 cup honey 1.5 cups mix-ins (flax, coconut, fruit)
Any ideas? Or do you have a granola bar recipe that you use and like?
I had a granola recipe once that always worked out great. I went to make it one day and didn't have any bananas, so I left it out thinking it was there just for flavor. That batch of granolas fell apart just like you described. Now I always make them with banana and they stay together pretty well.
